Teraoka family cattle farm has been breeding Pasture raised Noto beef in Northern Wajima amongst the salt farms for generations. This is their restaurant in Kanazawa . The beef is known for LESS Marbling vs other Wagyu which translates into not just a better quality of life for the cow but a lower melting point so the beef truly melts in your mouth when you eat it. The flavor truly expresses the beefiness but the fat flavor is not so heavy.
