Kumaushi in Teshikaga is one of those rare, unforgettable dining experiences. The owner runs the entire place completely on his own—taking orders, cooking, serving, and handling payments. It’s truly impressive, especially considering the menu is quite extensive and not just a simple set of dishes.
Naturally, this means you’ll need to wait a bit, but the experience is well worth it. Despite being a one-man operation, everything we ordered was delicious and thoughtfully prepared. The soba noodles, in particular, were a standout—they’re handmade in-house and had an incredible texture and flavor that showed real craftsmanship.
What amazed us even more was that under all this pressure, the owner remained calm, kind, and welcoming. His dedication and energy brought a warm, personal touch to the meal. We were so impressed that we returned later to order a pork rice bowl to-go—and yes, it was just as delicious.
The restaurant itself is cozy, and being served directly by the chef himself makes the experience feel special and personal. The food quality far exceeded expectations, especially given the circumstances. It’s rare to see such passion and effort packed into a single-person-run establishment.
