Hidden gem that doesn't look like much upon first glance but the food will blow your mind.
We arrived a few mins before six and the place was completely dark, leaving us to wonder if it was even open for business -- called out to the owner who confirmed the shop was open for business.
She didn't keep a big pot of stock boiling unlike most ramen shops but kept it cold in solid gelatinous form before scooping out two portions to reheat. Each spoonful of soup was bursting with rich flavour and left a sticky mouthfeel that confirmed my guess it was made with plenty of bones, leaving the end result brimming with collagen.
By not keeping the soup boiling, she ensured it didn't result in an overheated taste that most ramen shops have. Strongly recommend and would eat here again...
