I had the privilege to attend a pre-launch dinner - it was absolute heaven!!! The food was a fusion of Japanese and Italian techniques, traditions, and ingredients. Some stood out through their simplicity that was really riding the quality and deep taste of the ingredients, other dishes intrigued through creativity and technique. Some items were refined renderings of the familiar (e.g., figs with a fabulous burrata or local beef grilled to perfection), others extraordinarily rare (e.g., today's special menu was the first time I have tasted cod testicles, and they were incredibly good). The chef used to run a famous restaurant in Tokyo as I understand, but came here along with his family. His passion and technique combined with the richness of wonderful food produce that you can access in this vicinity, it’s just exceptional.
