Read moreWe ate at Botanica on February 13 while on a day tour from La Paz. We had an introduction so chef Sandro guided our meal himself. The grilled Manchego on the arugula salad was highlighted by the honey sweetness and slight bitter of the arugula. So satisfying. The burrata salad had tomatoes in at least 6 forms, dehydrated, roasted, jam, etc. The pizza was crisp and pillowy in the crust with wonderful flavor. Next course was gnocchi and risotto. The gnocchi with mushrooms and sausage was probably my favorite dish. Risotto was a beautiful green from the greens that flavored it. Super fresh lettuce and vegetables and the pickled veggies were perfectly done - not too vinegary. We also had the gordo pizza - what was also amazing. Highly recommend eating half and having the rest for bfast the next morning with eggs on top. Finally, we had the Mole Short Rib. AMAZING!! Comes with tortillas and extra mole so you can make tacos.
