Don't underestimate Victor's big white taco bus, just up the hill from La Fortuna's more well-known hangouts. Victor himself is a gem of a human being and will happily tell you about the plants he grows for both food and medicinal purposes. But the main attraction is the food. We went for tacos for dinner one night and went right back the next night, too, skipping the fancier places for the simplicity and charm of the taco bus. Everything is good but definitely add plenty of his homemade pico de gallo and some of his magical, smoky sauce--the little cup of salsa macha--a sludgy dark brown five-pepper sauce with his grandmother's secret ingredient (ask him about it!). Also, his homemade ginger lemonade is spectacular. We were sad the second time to find he'd run out for the day by the time we arrived. Victor is a local who has lived in that immediate area his whole life and has lots of stories to tell, if you can get him talking. Enjoy! Victor is a very inviting host, and he cooks a mean breakfast burrito, that comes with his own homemade macha sauce. Strike up a convo with him and he'll be happy to tell you everything you wanna know, from his homemade macha, to the history of Cabo Este, to the homemade ingredients that go into his simple-but-extremely tasty menu. He paints on his spare time, including all of the artwork you see on his van as well as his own line of t-shirts.

Victor was born and raised here - a true local and great chef who, occasionally, will use ingredients fresh from his plants that surround you as you dine. (If he's not busy, he'll give you a wonderful tour/lesson on all of his plants and their purpose.)
Every taco variation is delicious. The ginger lemonade is heaven. And his grandmother's macha salsa recipe (the tiny black condiment he brings out to your table) is something you will not find at any other restaurant. That deep, smoky flavor will forever live in my dreams!
