Bacon Republic — Restaurant in Baja California

The place was pretty basic breakfast plates. The fam that lives in Mexicali loves it because it’s hot cakes, omelets and options like that. I don’t like to eat that way in Mexico so I go for Chilaquiles or more local options. With the combo of both our pallets, I’m giving this a three. They were happy and satisfied. I wasn’t so much. I wanted my chilaquiles to be more authentic or drenched in sauce but all they did was grab tortilla chips and toss salsa on top.

Chilaquiles were good. Pancakes were little on the dry side . They need to add something to them . They say everything is better with bacon . 🥓 you would think they would add a slice of bacon to all their plates . Bacon 🥓 was a little funky . I thought it was going to be some fancy thick bacon 🥓 just regular Costco bacon . The restaurant was clean . Decorated nicely ! Restrooms were clean . Good service . Overall a good place the Chile relleno omelet was flavorful but they need to cook the Chile a little bit more to soften it, another tip is order it with monterrey jack cheese instead of the queso fresco otherwise the queso fresco turns to water due to the heat and it makes a mess.
