Can I give it a 10? it is 4:50 p.m. and I want to go back to Subrosa Italia. I was just there last night. I had homemade Strozzapreti with Italian sausage, home made, and mushrooms, in a cream sauce. Strozzapreti means priest choker or strangler. In some regions of Italy and France, you’ll find a similarly named spinach-and-cheese dumpling called strangolapreti. Italians sometimes interchange these names, the two “priest stranglers” couldn’t be more different. I won't speak more on the dumpling, but the Emilia-Romana version, Strozzapreti Sabrosa.
Sabrosa's chef strozzapreti is the one that has has a distinctive rolled shape that resembles a twisted rope. (The name does not mean to disparage priests; in fact, it refers to Italian lore in which a priest ate so much of this pasta that they choked.) Chef does an excellent job resting the pasta and keeping it hydrated. Resting it relaxes the gluten, so she can shape it. Work too fast, like me, and no way I can shape it, --it gets springy. This must be a formidable task with dinner service in a small environment, maybe 10 covers, inside? She must also keep the dough hydrated..another mistake I make. I have had so many instances of my dough dry on the outside--with the skin that is so difficult to shape and keep even. Hers is also evenly cooked. If you look up strozzapreti, you will see there are thicker parts and thinner parts. she cooks it supurbly, so all is done correctly with no part too done or too sloppy. Subrosa's chef must be patient, thorough and know exactly the temperament of pasta. . Let me say, it is difficult for home chefs to be patient and thorough; it s difficult to think she does this with hungry covers waiting for her food. The one thing I would disagree with is that there are only four sauces that complement this disch. I may have misunderstood the gentleman who described this to me, but he definitely said four sauces. I would recommend several more but, alas, I am not the chef, lucky for the diners.
The bottom line is, the food at Subrosa is carefully made and delicious, hot and perfectly prepared. I have had the good fortune of having exceptional Italian pasta from Italians and this is equal or superior. Please try it yourself. My husband had the Gorgonzola with cherry tomato simple cover and it was to die for. In the restaurant, I would only change this: I think they should not put food pictures in their menu. food pictures just do not translate very well on a menu unless professional and even then there is the inevitable, "but mine does not look like this." think Facebook and insta--nah, just dont. And get a house white wine that is cold, crisp and complementary to the indescribable dishes you make. but I love the wine glasses. The food - homemade pasta is absolutely wonderful, not too soft or too hard. Gnocchi was soft and pillowy, easy bite with a really really nice sauce. Shrimp was cut into bite sized pieces which made it easier to eat with the pasta. Ravioli was perfect, not soft or soggy like some ravioli are. Went really well with the sauce and a good portion too! Spaghetti like pasta was also very good, a very olive-y flavor with olives as well as olive oil. A little on the saltier side from the capers, but definitely delicious. Would recommend any of these dishes.
The appetizers of bruschetta and caprese were very fresh tasting. Caprese came with slices of bread to enjoy with and was well seasoned while still keeping to the flavors that you look for. Bruschetta was really good, even for someone like me who isn’t that into tomatoes.
Finally, the panna cottas were a beautifully creamy texture and the flavors were great! The coffee was strong in the coffee one and the bites of blueberry with the blueberry one was excellent.
Besides the food, the owner was wonderful and very kind. He was very attentive and recited the whole menu detail for us, which helped us know what we wanted and what we didn’t. He and his wife came from Italy - his wife cooks in the back.
Now the real kicker, we tried for like an hour to get a taxi or an Uber - the owner even called the taxi place to try to get us a taxi but they didn’t answer. He also called our resort to try to get us a taxi but they said they didn’t have any and hung up. He spent a lot of time trying to get us a ride while we tried to get an Uber and right when our Uber arrived the driver cancelled on us. We ended up waiting at the restaurant for them to close (it was closing by the time we gave up the search) and then the owner took us home. A very kind thing to do that he didn’t have to and we will be returning soon.

Al menos de mi parte no se preocupen no vuelvo para que no les moleste mi hija y me agredan con sus comentarios ni me pongan en mal con mis amigos o me exhiban como lo hicieron, de forma que sus clientes como dijo escucharán su trato hacía mi persona, le dejo con sus "clientes" como dice usted, ya que por lo visto yo jamás fui considerada como tal, ya que no han considerado que es bebé que esta aprendiendo a comer, esta desarrollando su psicomotricidad gruesa y fina y los bebés no modulan adecuadamente sus expresiones y si me exigen que no se exprese mejor la dejo amarrada y realmente ella es su cliente por que le fascina su comida, y pido por favor indiquen que no se aceptan bebés. Como me dicen que esperan los visite si en cada ocasión me reclamaron el que mi bebé ensució su pared, pena con mis amigos al llevarlos, a los cuales les recomendé su restaurante y en lugar de recibir algo bueno recibí un reclamo y lo peor hasta le cayó mal la comida a mi bebé, realmente es triste ver ese trato. Ah y si le sigue molestando lo de mi bebé le compro un litro de pintura y le lavo la periquera para que no le moleste. Dejarla mas de una hora como dice es incorrecto, ya que la niña se cansa de estar sentada y estuvo sentada y levanta en diferentes ocasiones, así que no tergiverse las cosas, además un niño no habla y no sabe como pedir las cosas, no invente el número de veces que han ocurrido las cosas por que incluso trate de limpiar su dichosa periquera, reitero cuando un niño esta aprendiendo a comer sus movimiento no son consistentes e incluso que le moleste preguntas de parte de gente nueva también es difícil sobrellevar, no son una guardería efectivamente. En ningún momento se le ha pedido que cuide de nadie. Y no sea mentiroso al decir que fueron 3 y luego cuatro veces porque no fue así, supongo después serán cinco o seis o siete mejor, y fueron cosas enteramente distintas, se da cuenta de su propia contradicción?. El postre se le puso en un plato no directamente en la periquera, se le dio un cubierto, quiere le pegue a la niña para que lo use si aun no quiere tomarlo?, así que de verdad no sea mentiroso. Ocupada con mi teléfono fue cuando llegue la niña ni siquiera había comido nada, estaba hablando por teléfono para ver a las personas que iban y se lo comenté y no por ello ignoro a mi bebé, por que estuve caminando con ella mientras no tenía gente e incluso cuando llego gente, preferí salirme del local y eso fue previo a comer, así que reitero no tergiverse. Es más el hecho de que le moleste indicar sus horarios es triste, ya que se le pregunto con la mejor intención. Y cuando grito se lo dije que fue la manera de expresar su emoción por ver algo que le gusta, ya quería comer, entonces como acalla las expresiones de gusto y desesperación por comer? y se lo dije en ese momento, o por que le gusto alguna canción y gritó emocionada?, o como acalla el llanto cuando tiene sueño o quiere su leche o hizo del baño?, esta última incluso salí y fui al coche a cambiarla, ya que evidentemente no cuentan instalaciones adecuadas para ese fin, de hecho por eso me retiré en dos ocasiones por que...
