I think one of the common misconceptions about Mexico is that it's all beach and resorts but Mexico City and Monterrey very quickly changed my perspective
In 2018 when I worked in Mexico for two months I visited a distribution center and shadowed a delivery in Monterrey and was amazed by how beautiful the mountain in the middle of the city (see the second panel) was and how hospitable the people were.
After our shadowing of the truck route our client representative took us to a little shack of a taco shop and suggested (in Spanish) that I try something new. A weird eat - the tripe (cow intestine) taco and man was I glad he recommended it because this might legitimately have been the best taco I had in my entire trip in Mexico. Here's a breakdown on why: Consistency: tripe has a similar consistency to calimari and when you get used to it, you enjoy the slight chewiness you experience Flavor: this taco had tons of flavor, spicy and a bit saucy this tripe had awesome flavor The tortilla: this was a white corn tortilla, cooked perfectly to have a slight crisp on the edges but still soft and delicious on the rest of the tortilla
If you go to Mexico, make sure you don't stop just in Cancun or Cabo, the rest of the country is full of amazingly rich culture...

El tema del servicio es difícil de describir... Pero en resumen es malo, los meseros aunque no había nadie literalmente nadie más que nuestra mesa, nunca nos volteaban a ver, pasaban aún lado si voltear a su única mesa... Y aunque la gerente intentaba reaccionar rápido las promociones que tienen son muy confusas y llenas de reglita locas... Por ejemplo, si compras todo los boneless que puedas comer, el refresco refill ya NO lo puedes comprar, aunque si está en el menú, otra: compras todos los boneless que puedas comer, pero solo pueden ser una sola salsa ¿Cómo, por? Y así más reglitas muy raras... Pero bueno al menos los boneless (BBQ, que fueron los únicos que pude probar) si...
