Sense is an amazing restaurant that rightfully has kept its michelin star for several consecutive years.

The best words to describe Sense and its food are 'Interesting' and 'Clever'. Not only are the staff able to provide you with a great experience, interesting facts and good service, the food and its preparation is top notch.

We had the Chef's Challenge menu; this really showed the technical skill of the kitchen team. Not only were they able to cleverly do different executions of the same ingredient in one dish, each dish was unique and definitely not something you would find in a different restaurant.

Although the dishes were innovative and the flavours amazing, we found that most dishes ended up being 'soft'. While many dishes usually have a crunchy centerpiece that is accentuated by soft elements, many dishes at Sense were the opposite: A soft centerpiece with crunchy elements to accentuate it. This however ended up in many of the dishes having similar textures and the eating experience being a bit confusing in terms of what part of the dish you should start with. We did not feel like every dish was trying to tell a story, but each dish definitely showcased the skill and creativity from the chef and his team.

The staff was very attentive of our needs and were happy to help or answer questions. Our biggest compliments go to the sommelier, who assisted not only with (wine) pairings but was also able to give detailed explanations on the origins of the wines and his choice for the pairings he made.

The interior was interesting as well, with many different colours from (fake) flowers on the ceiling and walls to the red carpet that contrasted with the green pants that the staff wore.

The restaurant is fully wheelchair-accessible and there is plenty of space around each table to facilitate to any...

To be honest upfront: this was not my best 'star' restaurant experience so far.

At the arrival the lady pointed us kindly towards our seats and took our coats. We started with a glass of beer, a Dutch bottled beer that is slightly more tasty and special than your average lager beer.

We decided to take the four course menu, since we had other plans for later that evening. Some note to myself: don't plan other things for later in the evening if you are going to a fancy restaurant like this. In between courses we received some small bites. These all tasted very good.

We found the food looking gorgeous (as can be seen on the photos). However, we were not that impressed by the taste and the creativity of the ingredients. Don't get me wrong, it was all nice, but both the second course with the fish as the main course with the meat lacked some extra edge. Also, there was a very considerable amount of time between the arrival of the main course and the course before.

But perhaps more than equally important in giving three stars in total was the staff. For a normal restaurant I wouldn't bother writing this, but for this restaurant I do. I found the staff missing some sensitivity, especially when the place got busier later in the evening. For example: right after the main course I asked the lady whether we could swap the desert for cheese. She asked me to be patient and wait until she was ready to note this swap a couple of minutes later. As I said, it was not a wise choice to have other plans that evening and to hurry after the main course, but being kind is free.

As a result: three stars is the frank reflection of the contribution of this restaurant...

Ditmaal een lunch bij twee favoriete chefs die hun krachten hebben gebundeld. Binnen het vertrouwde interieur gehuld in romantische kerstsfeer. We werden begeleid naar een grote ronde tafel aan het raam, fijn. Als aperitief de Cuvée Tradition Costières-de-Nîmes 2020 van Mas des Bressades die zeer goed beviel. Om te knabbelen krokantjes van pijnboompitjes met luxe dip van gerookte watermeloen in basilicumolie, afgedekt met lobbig schuim van Pecorino, lekker. Gevolgd door het hapjes duo. Om te starten een lauwwarme bitterbal van risotto met een toefje gembermayonaise, goede textuur. En blini met dot crème fraise afgedekt met haringkuit, heerlijk.

De amuse was opgebouwd met losse structuren van gin tonic waarbij structuren van rettich en passievrucht, veel smaakbeleving.

De eerste begeleider werd keurig gepresenteerd door de gedreven sommelier. Senteurs des Vignes 2019 van Albert Mann, een field blend met in de hoofdrol de Auxerrois, aangenaam complex met tonen van appel en perzik. In een gouden schaal een complex gerecht. Als basis delicate tartaar van langoustine afgedekt met gelei van ponzu, erop een gebakken langoustinestaart, verschillende zoetzure structuren van radijs en augurk met bumbu Bali, oesterblad, toefjes citrusgel en een dot crème van ponzu, aan tafel afgewerkt met een vinaigrette van bumbu Bali. Verfijnde smaken met frisse toetsen en Aziatische twist waarin de verrukkelijke langoustine mooi overeind bleef. De wijn werd iets ronder en sloot naadloos aan, genieten. (9,25)

Uit de Loire de Quincy 2017 van Domaine Trotereau gemaakt in een minder strakke zelfs ietsje ronde stijl met een vleugje grapefruit. Uit de keuken een bourgondisch gerecht in een mooie schaal. Een dikke plak gerookte paling gelakt met soja op een cilinder risotto, ernaast een rolletje van paling in het groen, dot fris schuim van rijst en quenelle compote van palmhart gemarineerd met soja. Het geheel was luxe afgewerkt met cilinders Foie Royale en toefjes gel van soja. Uitbundige smaken met luxe toetsen waar we helemaal blij van werden, de delicate wijn kwam wat in de verdrukking. Voor bij het pièce een Ribera del Duero 2009 van Antídoto in rijpe, gebalanceerde stijl met kracht, verfijning en aangename kruidigheid. Op een wit bord een grote hertenrug medaillon met verschillende structuren van rode biet, stukjes schorseneer gerold in sesamzaadjes en een streepje crème van speculaas, aan tafel afgewerkt met een geconcentreerde kalfsjus. Prima cuisson met mooie pure smaken waarbij de wijn keurig in balans was. (8,5)

Als dessertwijn een Ratafia uit Cahors van Fabien Jouves, biodynamisch gemaakt van Malbec druiven in de stijl van Tawny port. Troebel in het glas, amber kleur, krachtig en subtiel oxidatief met tonen van sinaasappel en rozijn. Op een donker bord een stuk bruin gebakken ganzenlever waarnaast een quenelle vanille-ijs, bombe van tamarillo mousse, stukjes kletskop, amandelpitten, vinaigrette van whisky en toefjes tamarillo gel. Volle smaken met zoete toetsen en een hoofdrol voor de hartige lever. De wijn sloot met kleine slokjes naadloos aan bij het speciale dessert. (9)

Bediening was zeer goed tot uitstekend verzorgd met gezelligheid en keurige presentaties op correcte wijze, in de hoofdrol de maître sommelier.

Samengevat kunnen we stellen dat dit onze beste eetbeleving bij Sense tot nu toe was. Bourgondische gerechten in klassieke Sense stijl opgebouwd met luxe ingrediënten en veel smaakbeleving waarbij een selectie fijne wijnen, keurige bediening en gezellige...

The 4 of us had the 3 course lunch menu with a cheese board add on. By far one of the best restaurants I have been to in Europe. The food looked, smelt, tasted amazing - hitting all the senses if you will. The atmosphere was top notch and the staff very friendly, knowledgable and attentive. My only regret is not taking a photo of every dish ! We can’t wait to go again and check out the dinner service!

The 4 of us had the 3 course lunch menu with a cheese board add on. By far one of the best restaurants I have been to in Europe. The food looked, smelt, tasted amazing - hitting all the senses if you will. The atmosphere was top notch and the staff very friendly, knowledgable and attentive. My only regret is not taking a photo of every dish ! We can’t wait to go again and check out the dinner service!
