Can only really rate this 2 stars. One for the location, decor & decent coffee. Two for the inexperienced yet eager to please waitstaff.
The reality is this place would not survive if it was located anywhere else. It will always be successful purely due to the location.
My partner & I just went for breakfast, leaving with a pretty bad taste in our mouths. The food was average to say the least yet the chef obviously considers himself a leading light on the culinary scene. My partner tried to order a side of speck with his French toast & was told the chef does not allow this, you can only remove ingredients never add as it messes with his 'vision'. Instead he received 2 pieces of claggy French toast, no no sauce & definitely no speck. My dish was equally disappointing, under cooked pancakes with a tiny amount of sauce. When we asked for more sauce I overheard the chef questioning what dish it was for, as if it was for the French toast it would be a hard no - god forbid we would add sauce to improve on his woeful cooking.
Sure, the Dutch are not known for their cuisine & being Australian we do have high standards when it comes to brunch, but the attitude of the chef is what made this experience worth sharing. This isn't a fine dining restaurant, it is basic food done poorly by a chef who has a chip on his shoulder. Shame to see other reviews saying the manager backs this guy up, with such an amazing interior you could have someone doing really incredible small plate, high end cuisine for the same price. Again, this place definitely would not survive without the great view & interior.

Republiek has one of the best locations you could wish for, right on the beach in Bloemendaal with a beautiful setting that promises a great start to the day. Unfortunately, the service and food quality don’t live up to the view.
I visited with my girlfriend for breakfast. The restaurant was almost empty, so I expected attentive service. That was not the case. We ordered two croissant a la plancha, expecting warm, nicely prepared croissants as the name suggests. Instead, we received two regular croissants with ham and cheese – one of which even had a piece of plastic inside the ham.
I immediately pointed it out to the food runner, who returned it to the kitchen. He did his part by apologizing and bringing a replacement, but the chef’s reaction was far from caring. In a restaurant, especially one that wasn’t busy, something like plastic in the food is a serious mistake that deserves proper attention and accountability.
We ordered two more coffees and asked for the check. Surprisingly, there was no further apology, no gesture, and no sign that the incident was taken seriously.
In short: Republiek offers a stunning location, but service and food control are lacking. A shame, because the potential here is huge – but as it stands, the experience doesn’t match...

The location is really nice however the food menu for breakfast and lunch is very limited.
After 40 minutes of waiting for a simple croissant, I have been informed that they were finished at the exact time when the other meals arrived at the table. I should have been informed earlier so I could have changed my order on time rather than waiting while my friends were eating.
A friend of mine ordered the plate for 15 euros which includes the croissant, bread, jam, yogurt, ham, and cheese. Since the croissants were finished, they simply delivered the plate without it, the client has not been informed and he didn't receive any discount.
Furthermore, we ordered pizza Margherita, which on the menu was with basil. We received a pizza Margherita with rucola without reason. After we complained, they made a new pizza without rucola, and during the check, they wanted to charge for the wrong pizza as well.
The quality is really poor and pricy.
