A 1 star rating for a 2 star Michelin restaurant, is that right?? I thought long about writing this review YES or NO, but eventually I decided to do so. The 1 star review does not mean that the food is bad, please do not compare it with a standard restaurant. This is 1 star review for a Michelin starred restaurant. Please let me elaborate why I have given this review.

In July 2021 my wife and myself booked a lunch at this restaurant. We also wanted to use the so called 'Tribeca limo service'. So we could maxime our food with pairing wines. We did not know how to book this with our table, we were visiting this restaurant the first time, so I called. There was no response, so I left a voicemail. With no response on this voicemail, I mailed. No response. Luckily the weather was great, and we decided to go by bike.

We were received warmly in the restaurant and received a great place in the outside garden. The amuses we received were very nice and came to us with rapid fire, so we had to keep up. The lunch menu we choose was the 'High End Menu'. With a wine pairing and nice weather, we enjoyed our afternoon. However, the joy was shortly lived. Only a couple of hours after we came back home, the entire lunch came out: we were both sick. The night and day after no food were able to remain, and we contacted the restaurant. Maybe it was food poisoning, so we thought it to be wise to alert them . They responded swiftly and made a generous offer: we were invited to visit the restaurant again to enjoy lunch or dinner complementary of the restaurant! Although food poisoning looked excluded, they said they wanted us to 'enjoy our food for a week' instead of a couple of hours. Great service.

It remained silent from Tribeca from that point on.

I decided to contact the restaurant again in November. I called (to make sure we received a date) and it was confirmed for December 2021. It was withdrawn within a couple of hours. #Covid19 was the argument and I could understand they would rather have paying customers in house. So I requested the owner by phone to book a fixed date in 2022. That we both know what we could expect and when. She agreed and promised me to call back November 17th.

Today it is December 2nd, and I received no response thus far. For a place that holds quality of food and service as the one true value, that is proud to be part of all international awards, I personally expected more.

So to summarize: a 1 star review due to the service and contact offered before and after our visit. I would recommend to visit one of the other Michelin star rated restaurants in Noord-Brabant. For example: Wollerich, De Lindenhof, Zarzo, or 1910 in Eindhoven. The last has no Michelin star, but offers a 2 star staff, service...

Let me start with the service, which was impeccable from the moment we stepped into the restaurant. Our young host, who had been working at Tribecca for only six months, was remarkable. His body language exuded confidence and knowledge, and his tone of voice was professional and refined. He made us feel welcome and attended to our every need throughout the meal. His attentiveness and expertise added to the overall enjoyment of the evening.

Moving on to the food, the chef and his staff truly impressed me with their culinary prowess. The dishes were meticulously crafted, showcasing a perfect balance of flavors and textures. Each course was a work of art on the plate, with exquisite presentation and attention to detail. The ingredients were fresh and of the highest quality, and the flavors were complex and harmonious. Met zus naar de nummer 2 van Nederland. We waren iets te vroeg dat was gelukkig geen probleem. We werden begeleid naar de lounge en streken neer op de comfortabele stoelen. Als aperitief de Tribeca coupe, een huisgemaakte limoncello van mango, sinaasappel, rode peper en munt, dat was niet mijn ding. Erbij een crispy tartelette met bereiding van paddenstoel, peterselie en geraspte eidooier. Die kwam niet helemaal tot zijn recht. Op een krokantje van romeinse sla een salade van appel en venkel. Erg lekker met mooie magie toets. Ons laatste hapje in de lounge was een krokant gebakken beignet waarop een salade van doperwt en munt. Goede textuur met lekkere frisse toets.

We werden begeleid naar een tafel aan het raam in het restaurant waar de signature amuse werd gepresenteerd op een hoge porseleinen voet. Een krokante cannelloni van bataat gevuld met eendenlever gekruid met five spices, erop toefjes crème van frangelico, dotjes citrus gel en chocolade parels, toppie.

De eerste begeleider werd keurig gepresenteerd door de nieuwe sommelier. Haus Klosterberg Riesling 2020 van Markus Molitor gemaakt in sappige frisse stijl met aangename mineraliteit. Op een prachtig bord een hele strakke presentatie. Tartaar van harder aangemaakt met pesto van lavas in een vinaigrette van groene appel, afgedekt met een dun krokant schijfje van rijst met poeder van algen. Verfijnde smaken met frisse toetsen die naadloos aansloten bij de heerlijke wijn. (8,5)

Uit Oostenrijk een Grauer Burgunder 2021 van Umathum, complex en indrukwekkend, wow. Ernaast een klassieke presentatie op een wit bord. Snoekbaarsfilet Parmentier (Fransman uit de 17e eeuw) krokant gebakken met bereidingen van aardappel, knolselderij en prei waarbij wat laos. Uitstekende cuisson en mooie volle smaken die door de wijn nog iets lekkerder werden. (8,75)

Voor bij het pièce een Sur Les Hauts Bourgueil 2019 van Aurélien Revillot, Cabernet Franc gemaakt in een redelijk krachtige stijl met tonen van rode bes, kers, vleugje boersheid en elegante afdronk. Ernaast de topper van de middag. Anjou duif, de borstfile en het hartje waarbij vers zwart en rood fruit en een artisjokhart gevuld met snijboon en krokantjes. Aan tafel afgewerkt met de eigen saus verrijkt met dragon, dille en koffie. Prima cuisson en luxe smaken met aangename kruiden toetsen. Het fruit optimaliseerde de koppeling naar de wijn, complimenten. (9,25)

Als dessertwijn de Jurançon Doux 2021 van Peyrette – Lasserre gemaakt in licht zoete verfijnde stijl met tonen van abrikoos en tropisch fruit. Ernaast een tweetraps gerecht. Op het bord een fruit salade in lichte siroop afgewerkt met munt, schaafsel van witte chocolade en kleine merengues. In het schaaltje sorbetijs van vlierbloesem op een crumble van gekarameliseerde witte chocolade. Het fruit was heerlijk gemarineerd, de chocolade was keurig gedoceerd en de merengeus gaven een subtiele bite. De wijn sloot keurig aan, prima. (9)

Als afsluiter een hele krachtige en behoorlijk zure espresso met madeleine en heerlijke bonbon. Ik paste voor de taartjes die als na service kwamen.

Bediening is een moeilijk punt ditmaal, ik ga niet in detail maar het liep van voldoende tot uitstekend.

Samengevat was deze beleving onder onze torenhoge verwachting. Dit was mijn 9e bezoek en eerlijk gezegd mijn minste ervaring. Dit had te maken met de matige start, bediening en het gebruik van minder luxe ingrediënten wat ik niet vind combineren met de sterk verhoogde prijzen. Update: Deze keer hebben we niet de keukenkamer, maar het restaurantgedeelte bezocht. Beide plekken bieden een heerlijke avond met topkwaliteit. Welke van de twee je kiest, hangt wat mij betreft vooral af van wat je die avond zoekt. Ga je voor meer privacy of romantiek? Kies dan voor het restaurant. Wil je juist een meer dynamische omgeving en een wat uniekere beleving? Kies dan voor de keukenkamer. Bij beide is het absoluut genieten! We kijken uit naar april. 1e keer: De verwachtingen waren hoog, maar ze zijn zeker waar gemaakt. Wat hebben we hier een geweldige avond gehad! Het diner in de keukenkamer was top. Alle gerechten waren heerlijk, goed in balans en van constante kwaliteit van amuse tot friandises. Aan het begin van de avond besloten we om eens een mocktail te proberen en ook deze viel goed in de smaak. De wijnen die later op de avond werden gepresenteerd bij het eten waren lekker en pasten goed bij de gerechten. Ook de interactie tussen de verschillende gasten, de bediening en de keuken was een leuke toegevoegde waarde aan het geheel. Fijn dat ze het ook voor tweetallen mogelijk maken om een keukenkamer/chefs table ervaring aan te bieden. De avond werd later nog wat specialer toen we een rondleiding door de zaak kregen van Jan zelf, die de hele avond goed zichtbaar was en interesse toonde in de gasten. Wij komen zeker terug!
