I had come here many years prior, but it feels like they haven't kept up with their core principal: highlighting the unique coffees of the Philippines.
I had both of the coffee pourover options they had available at the time: Sagada and Mt. Kitanglad. Unfortunately, their roast style and brew methods failed to highlight any unique flavors in these since they were both medium/dark roasted and they were brewed with a French press method, despite my initial request for a hand pour. The French press used water that was far too hot for this roast style and I wasn't a fan of the amount of sediment they left in the cup as well. The flavor notes were more roast flavors than coffee with a muddy texture.
It would be my hope they 1) offer a wider selection of flavor profiles for their brew coffee options including some lighter roasts and natural processing methods, 2) switch to pourover method to pull more flavor with less sediment, 3) dial the coffee in to highlight the differences, which means figuring out the proper grind, water temperature, and pour style for each unique bean, and 4) put information in the shop itself to show information about the origin and processing method to teach customers about the unique options available instead of making them go to the website to find info.
