The owners have obviously trained the cooks to use just a pinch of salt in the dough, but it’s a tiny pinch, not a real pinch, so the bread is flat-tasting.
Using San Marzano tomatoes is great (they require effort to source), but you can’t just dump them out of the can. They need to be cooked into a sauce, with things like salt and pepper and garlic. Otherwise the tomatoes won't express their acidity, leaving the result dull and tasteless. To match the dough.
Kudos for coming up with sort of real mozzarella, and not letting it stiffen under refrigeration. That’s a unicorn in Portugal, and I know how hard they must work to make it happen. But it would be better if it were decent mozzarella. This is tasteless and flat.
Tasteless dough + tasteless “sauce” + tasteless cheese is not a winning combination.
On the other hand, this fits the category of real Neapolitan pizza, otherwise impossible to find here, so I sincerely congratulate the owners and give them 3 stars for at least making it happen at all.
The wine is horrendous. It's true that wine you can sell for 5€/cup will never be great, but why not take two or three hours to taste a few dozen bottles and find something that doesn’t make customers choke when they swallow? Management is marketing this as a high-quality destination restaurant, so why so many needless sloppy shortcuts?
REPLY TO OWNER: You nitpicked my posting. “Slightly different tomato? ZZZZZZ you don’t deserve an opinion!” Also thanks for your salt recipe. That definitely makes up for the flatness of your obviously under-salted crust. You have a recipe!
But I wasn’t looking for an argument. I was just trying to offer something more substantial than “your pizza isn’t very good.” But in the end, your pizza isn’t very good. Your marketing claims are irrelevant. Every restaurant has its claims, but what counts is the taste, which is decent for Portugal (hence the good reviews, and my three stars), but really “blah” for anywhere else. Vou dar três estrelas por que fizemos reserva, chegamos na hora e ficamos em pé esperando por 20 minutos pois segundo eles fizemos a reserva muito em cima da hora. É melhor não terem um sistema de reservas se não conseguem se organizar do que fazer as pessoas perderem o seu tempo, achei desrespeitoso.
Ficamos mais 15 minutos após sentados esperando que alguém fizesse contato visual conosco ou que viessem a nossa mesa para nos atender.
Além disso o banheiro feminino tem uma tranca que não funciona. Também não acho apropriado o quadro que fica no corredor do banheiro uma vez que a unidade fica escura por alguns segundos, pode assustar os miúdos.
Restaurante com grande potencial, mas esse tipo de erros vão os fazer perder muitos pontos aqui no google maps.
