I have been wanting to patronize this store again ever since it went viral on several social media platforms in recent months and most recommended Fried Hokkien Prawn Mee store. The last time i had their signature dish, was when they were in Bedok Reservoir Road many years back.
As i was among the first few person who was waiting outside the store before they opens at 11am, i managed to receive my plate within 10 mins after ordering.
The regular S$6 plate came with a good mix of yellow noodles and thin bee boon coated in a savoury seafood-infused sauce, topped with 3 plump prawns, slices of pork belly, squid rings and pork lards.
Each bite carries that umami depth from long simmered prawn and pork bone broth thatās rich and flavourful, rounded off with hint of bitterness, due to roasted prawn shells and smoky wok fragrance, soaking nicely into slightly charred chewy yellow noodle and soft bee hoon of wet & dry texture. The chilli on the side deserves mention as it added a bold kick that elevate the over flavours of the dish.
Overall, they delivered a soulful and good-balanced flavour plate of traditional fried hokkien prawn mee. Traditional due to usage of thin bee boon which i personally preferred, as most modern stores use medium or thick bee hoon instead.
I also preferred a stronger prawn flavoured (lacking for my plate), however consistency of such broth depend heavily on time taken to simmer, as well as freshness, quality and handling of ingredients, thus i hope to get a slightly more distinctive prawn flavours next time round when i...

NEW (5ā) It's da bomb š£ Not sure why I gave it 3ā 9 months ago.. maybe it was the slightly dodgy coffee shop then.. but I did remember that the FHM was a let down (previously).
But it's different today. Each wok must have taken close to 20mins, the frying of the noodles was non stop, then the beehoon, then the garlic, then the prawn stock.
I think it's the best FHM in SG at the mo.
OLD (3ā) The 'fame' of this HKM brought me here.. it's got so many positive mentions in various communities.. and that hyped its reputation and also heightened my expectations.
Ok, it's decent, in my opinion. I got the $6 portion with $3 extra topping of pork belly (just out of curiosity).. but I don't think I saw or ate the extra 'top up'.
The chilli is not my type, I prefer the darker/ savoury sort that's less sour.
But the noodles itself weren't remarkable in my opinion, I dont mind it being the drier type, but it's not got the wok hey.
The environment/ vibe is a tad different. It's got a significant smoking zone, and not too many...

$6 is not competitive especially when there are 2 other Hokkien Mee stall just 3 mins walking distance away (The long stretch of hawker centers located in Circuit Road). Those stalls are selling Hokkien Mee that starts from $4 while their larger portion is $5. The quantity and quality that Chuan Hokkien Mee is offering is similar to the one at the other Hawker Center. (The only difference is the competitor uses more garlic)
Hence if Chuan Hokkien Mee wishes to continue with the $6 premium pricing the least you guys should do is offer a consistent quality and quantity. Decide on exactly how many Prawns you're offering to the consumer. Don't leave it up to lottery. Also the overall taste of the Hokkien Mee must be consistent. If you can't offer these 2 things, either increase the portion size for the $6 tier OR reduce the price to match your competitors.
