Is it worth the trek? You betcha. Opened less than a month ago, Southside’s @InterimMarket on Sentosa doesn’t require reservations but seating is subject to availability. However, if you plan on having @4am.pizza, you’ll need to pre-order your menu online (just tap on their link-in-bio). For the rest of the eateries, this step isn’t necessary. Although designated a “hawker centre” license as it is not air-conditioned, the huge warehouse-like structure actually houses a variety of bourgeoning food and drink concepts including a bar which has cocktails and craft beers on tap. Due to the location and open design, ventilation at the Interim Market is excellent. We felt comfortably cool all night long when we visited last Saturday evening. By the way, do note they are currently only open from Fridays to Sundays. In terms of food, besides the aforementioned #4amPizza, you can find home-style French food by @5bySansFacon, an assortment of much-raved-about burgers and hot dogs by Chef @bruno_menard of @buns2buns.sg, creative dishes along the lines of “whatever goes” from @luckysdiner.sg, and artisanal gelatos in exciting flavours by @Legato.sg. Having visited 4am Pizza a few times when they were a test kitchen, we couldn’t wait to have it again at their new home. And since I was keen to try other items, it made sense to pick their collab menu with #luckysdinersg when I pre-booked. Knowing both brands are by the same co-owners - @lucas_lim and @foodiebouba, made it a no-brainer. So here’s what we dug into: 1. “Pasta” - Amazingly, the white ribbons were strips of squid! And the tomato-based sauce, a ragu made from very finely minced squid. Such a tasty start. 2. Yum Ta Krai Ka Moo - The mini spread of pure aromatics with crispy sakura ebi, a fragrant, tender chicken and butter lettuce was mouthwatering. We washed these Thai-inspired yumminess down with a “Gin & Juice” ($12++, 8% ABV) and Californian craft beer “Briney Melon Gose” ($11++) from @glugland’s @junglefowl.sg. 3. Curry Chicken - Love this! The deboned fried chicken thigh which was crispy and juicy, came with a lip-smacking Thai-style curry thickened with pumpkin. I very much appreciated the refreshing cut-through from Haran Kumar’s pickled onions too. 4. “Lei Cha” or Thunder Tea Pizza - I was told that the recipe for 4am Pizza’s crust had been tweaked since I last had it. Well, I like it even more now. As light as before, the evolved crust is a little more chewy, and most importantly, remains very enjoyable even after cooling down. Spread on it was the herbaceous “lei cha” sauce which was decidedly fragrant and nicely rounded off with creaminess by cheese and a touch of heat from dried Sakura ebi sambal. Scattered on top, pistachio seasoned with sugar and salt. 5. Squid Ink Pizza - Even better than I remembered it to be, this was a genuine flavourbomb of unami-ness and loads of fresh lemon juice and zest. 6. Gelato - The two flavours we tried from @legato.sg were pretty much opposites. As the leaves were pickled, the Sakura Leaf flavour reminded me a lot of “sng buay”. More classic in profile was the Pine Nut which was covered in crunchy bits of pine nut brittle. We both found the latter more to our taste but I bet the more adventurous folks would fall for the less conventional Sakura Leaf. 7. Canelé - Thanks to Khai, a surprise treat came our way as the final bite - the perfection that is @kainurei’s canelé. We had a wonderful time and are already making plans to head back for more chill-and-makan sessions.

Nice place to chill. Food options may be limited but sufficient for us to select what we wanted. I did not make advance orders for 4am pizza and hence that option was out. Read about the review on buns2buns and headed down to try it. We had the party B quarter pounder which can feed 2-3 pax. It was good. Wagyu beef patty with comte cheese, caramelised onions, mayo and arugula salad. At $29.90, it came with fries. Two of us were full after our last bite. The place was breezy and well ventilated. You will be assigned to a table when you check in. If you have a preferred table, do let them know. They are nice and accommodating. They started in Sep 2021. Menus may change. I hope to be back to try the mussel, pizza and B burger with double wagyu beef patty. It is located opposite the entrance to Fort Siloso Sky Walk. There is a small car park in front of the interim market, ie Stacks car park. Alternatively, you can park at Rasa Sentosa which is a min walk away. Both charge $5 for first hour and $2 for the next 30 mins. For free parking, go to Nestopia which is about 5 mins walk away. There is always the reliable Sentosa shutter bus. Alight at Siloso point bus stop and the interim market is just behind the bus stop.

Heads up - despite the hype, taper your expectations because this is a passion project / soft launch / experimental kitchen thing. As an early backer, expect an unpolished product. Hype will keep it alive so if you can wait, I would wait. Food was good. Burrata was fresh enough and paired well with good tomatoes and lemon (curd?) Unfortunately there were lemon seeds so that was an unpleasant surprise. Pizzas were very good, chewy fluffy crust and thin but sturdy base. Toppings were great. We got lucky with two seafood type pizzas - one classic squid ink, and one yuzu kosho with swimmer crab. Fortunate to avoid the vegetarian pizzas. Two ice creams were good - we had smoked houjicha and coconut sorbet. Service was attentive. Since it only opens Fridays through Sundays, the servers were lively and passionate for part-timers. We arrived an hour early but it was rainy and dark so requested for the food to be served early and they accommodated us. Price is steep at $58 per person for the 4AM pizza set menu. No table bread or water, only bottled Evian. Parking is about $10. If you drive in for dinner, that is almost $150 to have dinner in an industrial food court in a dark corner of Sentosa with nothing to see or do nearby. I cannot blame them for this since they are currently hyped and always booked out so people are clearly willing to pay these prices. The ambience is exactly what you would expect from metal weather-resistant furniture, concrete floor, and giant industrial ceiling fans. This could be such a neat hangout spot if it had even Pasarbella or Marche vibes. Check the upcoming menu and reviews first. If you still decide on coming, I strongly recommend lunch or an early dinner to make the most of your trip to Sentosa. Fort Siloso is nearby, it closes at 6pm.

I give this place 4 stars mostly because of the ambience - the food was a hit or miss. The seasonal special from luckys diner was good, which was in this case a chicken poulet on a madras curry. The curry was deep, intense and chock full of umami, and the chicken was crisp on the skin and moist. The chongqing lamb skewers were a disappointment - it was served warm but obviously precooked and just warmed up - dry and unappetizing. The duck confit was really disappointing - the skin was rubbery, the meat was dry and heavy on the salt, and the pasta rubbery, oily and dry. The olive oil ice cream with salt was pretty good. The gin and juice cocktail was super refreshing and well priced. BUT overall, if you come here close to sunset, it’s pretty and nice to chill at, with a nice fake lawn in front overlooking the bay. Will be back to try the 4am pizza omakase.

Ambience was great - open air but very windy still. Think you can make reservations in advance to secure a seat, however when i went, it was quite empty so it was easy to get a seat quickly for walk ins. It is also a pet friendly place since i saw some cute dogs around! Food options were unfortunately quite limited in my opinion. Truffle fries (thick cut) were not very good since its lacking in the truffle taste. Yet, the seafood pasta was very worth ($25++) for lots of mussels and octopus (i think, if not its squid oops) and it tasted really good too, with the noodles cooked to aldente! Sauce was yummy too. Friends said that their pesto pasta was delicious and the portion was quite generous too. You place an order via scanning the qr code on the table, and one of the staff will serve the food to you, and payment is made afterwards before you leave.

Dining experience did not get off to a good start as front line staff was pretty much inexperienced & part timer. Left standing waiting to be led to table & staff gets ordered around and do not know how to properly handover & update the colleagues that they handed over as well Other than that unpleasant experience, the food & drinks are on the high side. However, one also goes in with their eyes open as it was also not advertised as an affordable food court as well. Always always preorder 4Am pizza as otherwise one will be left disappointed if the pizza are not available. The cold prawns & oysters from Angliss Marketplace were superb! Love the chicken satay too! Super yummy to be washed down with a bottle of white or even Craft beers. Pet friendly & the fur kids love it!
