If you're trying to eat horses that were bred specifically for food (as opposed to old pets or workhorses) in Korea then this might be your best bet. Here you can eat multiple types of horse saengseonhoe 말 생선회 (horse sashimi/ 🐎🍣 /raw horse), as well as multiple cooked horse dishes.
The steak , the stew, and the soup were all delicious. In one meal we tried 9 different parts and ways to eat horses. It was truly an experience. I preferred the stewed horse over over l everything else due to how dense the meat was, giving it a very strong flavor.
The KBBQ horse was also delicious because it was the only meat with a substantial amount of fat, which most horses don't have much of. The fat holds a different kind of flavor than the lean cuts or the organs.
The soup was made with horse bone broth and the radishes in the soup were so soft that they melted in my mouth. I never expected to like horse soup that much.
Sticking to the tradition of Jeju there is very little rice and lots of meat because Jeju was never a good place for rice farming. I don't think I'd be willing to eat raw horse meat anywhere else. This meal was all meat and vegetables. There was some black rice but i didn't feel the need to touch it.
The woman who cooked our food told us all about the different body parts and gave suggestions about how to pair them with the provided 반찬(side dishes).
