We discovered Merendero de Quimera in Oliva by chance, and it quickly became our favorite spot. It’s unpretentious, but the food and service speak for themselves. Locals gather here for paella, drinks, and hearty meals, which says it all. The staff are exceptional; on one visit without a reservation, they went out of their way to set up an extra table for us. During our 10-day stay we came back three times, each meal better than the last. From the outstanding paella to the crocante de bacalao, the octopus and the desserts, everything was memorable. A must-visit if you’re...

We hadn't reserved but luckily got a table for two. We also arrived 20 minutes before lunch service but we were seated with a great bottle of wine, excellent bread. We had some croquettes and crispy cod to start, fish of the date was a tuna with was perfectly cooked. Desserts of chocolate cake (excellent) and a deconstructed cheesecake which was the best dessert I have ever had! Service was good, friendly and professional. It wasn't cheap, but we felt the...
