great Hong Kong style egg puffs, but there is some room for improvement. they showcase the ingredients they use and it is obvious they use high quality ingredients.
ordered two: black sesame and cheese
crispiness: 8/10
temperature: 7/10 they blow dry the puffs after cooking for crispiness. they are quite professional in that they use a infrared thermometer to measure the temperature so that the amount of cooling is consistent. do note that this is done for a long time by default so the puffs are barely warm/bordering on cold when served. after speaking with the owner, he explained that Taiwanese prefer the puffs to be colder. if you like them warmer, you can request this when you order; on a recent visit, i requested the aforementioned and the puffs were much warmer (though not hot) without noticeably losing crispiness.
he also said that if the puffs are hot they are less crispy, but i recall Mammy Pancake in Hong Kong produces egg puffs that are both hot and crispy outside yet chewy on the inside. if the owner can figure out how to do hot and crispy, then he has found a gold mine!
taste: sesame was excellent--very fragrant sesame flavor and aroma. cheese is their most popular but i didn't find this particular combination of sweet and savory to be my cup of tea. may suit your palate.
