I recently had the pleasure of enjoying a delightful Kaiseki dinner at Inflorescence, and it was truly an unforgettable experience. Nestled on a hill, the restaurant boasts a stunning Japanese-inspired design that exudes tranquility. On the evening of my visit, the wind was brisk, and the chill in the air only added to the cozy atmosphere.
As I stepped onto the spacious terrace to watch the sunset, I was serenaded by the gentle chimes of traditional bells, which created a serene backdrop for the evening. The view was breathtaking, and it felt like a perfect moment in time.
The service at Inflorescence was nothing short of superb. My server, Tan, was exceptionally kind and made an effort to communicate in English, which I greatly appreciated since I don’t speak Mandarin. Tan provided detailed explanations for each dish, enhancing my understanding and enjoyment of the meal. It was clear that all the staff were genuinely warm and polite, contributing to a welcoming environment.
Now, let’s talk about the food. Each dish in the Kaiseki meal was beautifully presented and meticulously crafted. The ingredients were sourced from Japan, Australia, and other regions, ensuring a fresh and delectable experience. The wine pairing complemented the meal perfectly, elevating the flavors and making each bite even more enjoyable.
Overall, my dinner at Inflorescence was a remarkable journey for the senses. From the stunning ambiance and attentive service to the exquisite food and wine, I left feeling completely satisfied. I highly recommend this restaurant to anyone looking for a memorable dining experience!

Regrettably, the restaurant had no plan on integrating any of that with the dining experience. There was a tea room that the guests could not access. Really all it was was for the guests to roam around and for the staff to help take selfies. The course meal was a mix of Japanese, Taiwanese, and western ingredients that leaned a bit too heavily on western ingredients. The dishes were generally solidly executed and used high quality ingredients, but they were at times out of balance and the flavors didn’t quite come together. Read more9月底來的,隔天評論完,似乎寫太詳細被檢舉,其它人都看不到,特地再P一次,得讓想來的人有準備先。 ★先下結論→見面不如聞名,不推+不回訪,3.2k+10%/人,虛擲了 從建築景觀→食材→服務,三面方分別述說。
一、建築景觀: 相信多數人都因此而來,塑造上很有話題,細究卻不甚一回事。以下就隔壁的一炊煙比較來看(下簡稱炊與飛),更易理解(兩者基地面積相近) 1、建築風格:都是日系風,炊懷舊,飛簡約。 炊→採懷舊風,像神隱少女的木屋,屋裡有木桁架,窗戶有窗欞分割線,椅子套上紅布套,更有日系古風。
飛→採簡約+木造懷舊。僅二樓的茶屋,比較懷舊風,一樓作得有點失敗,因大落地鋁窗框分割太現代,遠看有如一整面玻璃,沒有木窗欞分割的美感,頭重腳輕,最大面積的一樓顯得很清淡無味。從外頭看進裡面,也是簡單沒變化(像菜色一樣,後述),若椅子弄個紅布套,像日本春天飲茶時的擺設,至少會有加分。
2、景觀: 炊→像中國林園風,轉折多,景點小而美 戶外座椅承室內風格,亦可觀夜景,賞庭園。原石水景配上木建築窗欞倒映的燈火,相當不錯。
飛→大量留白留空,走山水畫禪風。 夜晚燈光不足,枯山水就真的枯了…一片黑。最失敗的是那池水…水本身不失敗,失敗在藍色的磁磚。像泳池一般的水池,其建築根本無倒映在水面上…戶外發呆亭,隱身在轉折處,一來不像炊案可有夜景,二來只有2間,應該沒人想要併桌進去,不符人性需求。一整晚沒看到有人進去。 很多人會拍入口處要上二樓的玻璃樓梯,實話說,在木道長廊佐以清水模牆是剛剛好的簡約美,但再加上玻璃梯,就畫虎不成反類犬。
二、食材: 10道中,有6道是有魚味的(柴魚湯及鮪魚湯)…不知道老闆特愛,還是一次煮完,道道來用。上菜時間(因拍照有記錄)及內容詳述如後 18:00入席 18:10→先附:櫻茶。就是柴魚湯+一片櫻花。(第1隻魚) 18:14→前菜:白花椰菜豆腐+琥珀凍。前者直白,味道如其名的直白普通,就是花椰菜粒+菜打成豆腐狀。琥珀凍就是「柴魚高湯凍」(第2隻魚) 18:32→煮物:海老真丈+翡翠餡。就蝦丸用藕片夾著,佐綠色的醬汁(忘了是啥),醬汁中仍有柴魚湯調味。(第3隻魚)
18:42→造里:3片生魚片+1蟹絲海膽。白鯛等正常的生魚片,但海膽略腥。 19:02→缽物:當地竹筍+香菇,左白蘿蔔泥含柴魚調醬(第4隻魚)。竹筍鮮甜,正常偏好的水準(這不是應該的@@~) 19:13→凌物:5顆小圓壽司/人。依淡→濃,統一缺點,米不好,吃不出來醋飯味。玉子絲壽司無味→蝦卵壽司,有口感無味感→鮭魚壽司,有點煙燻過,正常→海苔鰻魚壽司,正常→酪梨壽司,還不錯,但上面那坨調醬忘了是啥,有點腥。
19:27→強肴。主菜之意。炸蝦,3塊骰子和牛佐3種調味。蝦,正常水準。和牛,完全被醬破壞了。醬汁鹹口,再加3種佐附調味後更過頭…有牛肉的口感軟嫩,但「味感」盡失,沒有油香充滿鼻腔的滿足。 這道是唯一向服務人員反應要加強的,和牛從近江牛,神戶牛,白老牛,都吃過。台灣人也都知道要吃其「牛油香味」,煎或烤過,略加鹽調味即可,但這道的醬汁super過頭…太super了…好像只有夜市的牛排會加一堆醬…可惜了。
19:34→椀物。鮪魚高湯+蛋豆腐等。體積最大蛋豆腐和魚湯,就是各自為政,豆腐沒有吸附魚湯味,你吃你的,我喝我的意思。(第5隻魚) 19:45→食事:雞油佐釜飯+茶湯(柴魚湯,茶泡飯用,第6隻魚。)吃到這道才有飽的感覺。雞油挺香的,但香是正常的啊…土雞城的g油飯也很香啊。 19:45→甜點,最中。就是最中餅…沒啥好講的吧
★以3.2k的菜,單一種「魚味」的調味,實在令人費解。又不是中秋烤肉,每種都用金蘭烤肉醬,以這價格,應該有更多變化才是。而其和牛,更是令人不能理解的醬汁處理。可惜了這牛。 以上時序,從第4道起,我就跟服務生講,可以上快一點,正常,可能得到2個多小時,看倌就自行決判要催促否。
三、服務: 這點在評論中有不少人提及,今實測如下 1、酒水促銷: →從入席就有酒水單促銷,一般是單子給你,要不要隨人,但可能老闆有額外給業績獎勵,服務人員比熱炒100的酒促妹還熱情推銷。 她說酒都有得獎很讚,我說我們有開車,她說,我們很多客人都會喝一杯,等飯吃完3小時後也ok,我聽了有點傻眼… 最後我點了一杯熱茶,及一瓶氣泡水。(★因為3.2k的飯,是沒有水喝的喲…真的,一杯白開水都沒有哦) ps,點杯150的熱茶比較合算,可以一直回沖,我沖了7~8次吧。
2、吃到尾聲,服務人員又拿一張泡茶水單,說可以飯後上二樓茶空間慢慢再泡,一壺約600。 嗯,就是沒付錢,沒得上二樓,不然就待一樓慢慢看。但我說我想吃完就回家,明還要上班呢,服務人員又沒業績,悻悻然閃了。
3、最後的「最中」甜品上來,服務人員又茶促了一次,說要不要換別的茶喝,更有層次。我說...
