Could you make it 4-star plus a tad longer review

Aquila in Chiang Mai is a standout dining option that deserves a solid 4-star plus rating. The restaurant boasts a stylish and comfortable ambiance, making it an excellent choice for both casual meals and special occasions. The service is consistently excellent—staff are attentive, friendly, and knowledgeable, enhancing the overall dining experience.

The menu offers a well-curated selection of international dishes, each thoughtfully presented and made with fresh, quality ingredients. The flavors are generally well-balanced, and the dishes have a refined touch that speaks to the chef’s skill. While the food’s presentation and taste are impressive, one area where Aquila could improve is the temperature at which some dishes are served; a few plates arrived lukewarm, which slightly detracts from the otherwise enjoyable meal.

The waiting time during peak hours can be a bit longer than ideal, but the attentive service helps mitigate any frustration. Pricing is above average for Chiang Mai, reflecting the restaurant’s focus on quality and a refined dining environment. Despite this, I find the experience worthwhile due to the combination of excellent service, inviting atmosphere, and carefully crafted dishes.

I splurged and ate here for lunch back in late March. I got the lobster roll and a sangria w/out alcohol. The menu had some pretty good choices, ones that make you say to yourself, “I’m looking forward to this experience. A talented chef works here.” The lobster roll and fries were enjoyable, and they were done right. Lobster is expensive, so there were about 4 small pieces on the bun, which made for about 4-5 bites. After finishing my meal, I wanted to order a coffee, so I looked through the menu. My server was with another person behind the counter, and the two of them were so engrossed with their phones that they didn’t check up on me. I decided to see how long it would take for them to notice that I had finished my food and that I wanted to order something else. I waited 15 minutes, and not a glance. Finally, I slid my chair back, and the sound of the chair on the floor got their attention. They noticed me again and cleared my dishes and brought me the bill. Look, I know it is a common practice here for servers not to bother you or your dishes until you’re either finished or indicate you’d like them taken away. But, I was the only customer in the restaurant. I was going to order more stuff. And, I had already spent over 800 baht…on lunch…at a restaurant on the Michelin Guide. This restaurant is a complete letdown. The service is mediocre at best. The serving of dishes was a complete disaster. We watched in disbelief as our table's orders were delivered haphazardly, with some people receiving their food while others were left waiting. Those who ordered multiple dishes didn't receive their dishes at one time. We were done eating the side dish of fries before our mains were served. It was clear that the kitchen staff had no idea what they were doing with running a finer restaurant and the servers were equally clueless.

To make matter worse we got served frozen butter with hard as rock small pieces of bread. This was simply unacceptable for a restaurant within this price range. It was a clear indication that they don't care about the quality of their food or the experience of their guests.

To top it all off, A RAT running on the wall/ceiling at the end of the evening was the final straw. Despite our understandable horror and disgust, the servers were utterly useless and even found our terror amusing. It's clear that they lack even the most basic levels of professionalism and common decency.

Overall, this restaurant was a complete letdown. It's clear that they have no idea how to run a proper dining...

Visited the place twice as it was run by the previous chef from Italics. If you're looking for huge portions then I'd point potential customers to Duke's. Otherwise this little restaurant serves mostly flavourful dishes. For starters, I would recommend the oysters with beef, you can taste the char from the torch. We tried Chef's gnocchi which was covered in rich cheesy sauce. Definitely go for the pork chop, juicy and off the bone. Decently priced for its size and comes with a good portion of mashed potatoes. You can try the Thai flavoured Risotto if you are feeling adventurous, otherwise you can stay safe and go for the Japanese styled one with seafood. The pesto Risotto has fruits and vegetables in it, for those who like it sweet. Pizzas are all good, just lacking that extra oomph from the heat of the oven compared to the previous location. The pizza portion is not too big, so it gives everyone a chance to order more to sample the different flavours. Like I said, if you just want to stuff your face on a budget, go to Duke's or a buffet. Otherwise just head down to Aquila for an enjoyable happy meal.

Luck was on our side because the server made accommodation by allowing us to sit outside on the patio. After ordering drinks we decided on a salad plus charcuterie plate as our appetizer. Let me say it was amazing. what stood out to me was the mix of fruits and cheeses. Everything paired really well with each other. I'm pretty sure we ate everything on the board. For the main dish we chose the tomahawk steak. Dang! It was delicious and must try. Definitely something to share with friends and family. I think it was served with 5 sides and also 6 sauces. Chef Phubase is definitely a master at what he does. He even personally served us a delicious complimentary fried rice dish to go with our meal. Super nice of him. I will definitely introduce more friends and family to this restaurant when I'm in town. It was a pleasure to eat here. Wish I would of had more time to talk to Chef Phubase. Maybe next time I'm in Chang mai.
