I'm a regular customer of Holy for many years and visited most of their bakery shops in Bangkok. I think they have outstanding bakery products. I really appreciate premium quality of the ingredients they use. They established a great brand and thanks to good management, they maintained high standards and consistensy in all their branches. It really is a joy to come here, especially in the "mothership" as i think the setting in the actual bakery is perfect. Besides good food, i also appreciate the attention to detail regarding the environment, with straws made from biodegradable materials and no unnessesary plastics being used.
While writing this review, I notice the Holy management being present in the store and hear them having a meeting on the coffee. As an espresso fan, i think Holy can hugely improve on their coffee. I'm not sure if its the grinder (too fine), the machine (flow too slow), the quality of the bean or a combination the above. But i stop ordering espresso at Holy Monthership a long time ago as the taste is burned.
I wasnt sure about the group dynamics (i think one of them was a coffee supplier) so i thought it might not be appropiate to be too vocal on my opinions regarding coffee. Although i appreciated the gesture, the "new" medium roast bean that was prepared for me didnt taste like a big improvement.
The fact Holy management was there together discussing their coffee is already a promising sign indicating they want to improve their coffee game and elevate it to the same level of quality as their bakery items.
I sincerly hope that, before commiting to a supplier, they will dive deep into the specialty coffee scene and pick up some great blends with high cupping score in general, and good acidity/sour tones for espresso in particular. I can see some synergies/collbaration with local specialty coffee roasteries from Bangkok, who often provide excellent coffee blends but might lack the expertise in bakery items. Perhaps these roasteries would be happy to have their menu's enhanced with products "powered by Holy" in exchange for a unique "Holy specialty coffee blend" locally roasted by them. A perfect synergy and win-win situation.
The above just expresses my personal views and taste. My comments on the coffee is just a minor detail. Even without improvements on the coffee, i will still be happy to visit Holy anytime.

Read moreThu. 15 Aug 2024. Large order (฿2K+) delivered by 10 a.m. today. I'm only commenting on the items new to me. Gazpacho? Oh yum! Very light, refreshing, and tasty! Definitely an item to reorder in the future. And the 2 baguette slices work very well with the soup. 😊
O.k., I've never ordered a full sourdough baguette from here before. For my tastes, I do wish these sourdough items had a lot more sour to them. The bread's texture is on point if you like light and crispy; so overall 4.6 for a baguette. One thing though, the baguettes are massive; they are like 2 baguettes in 1 loaf!
The smoked salmon on the focaccia bun: the salmon was flavourful but to me tasted more like lox. (i.e. cured rather than than smoked) I found the cream cheese style yogurt in the same venue as the cheese on this bakery's Italian sandwiches - very good in taste but lacking in amount. (I haven't tried any of the cheese forward items yet. But where cheese is a secondary ingredient, this seems to be a repeating theme here on cheese overall.) The focaccia bun is excellent. That's definitely a keeper for the menu. Not the type of focaccia I would eat by itself, and I love good focaccia, but as a vessel for anything – these buns work. Sandwich overall 4.4 / 5; bun 4.6 / 5.
The butterscotch pecan bar: woohoo! It's nicely balanced – not too sweet, and loaded with pecans. I really like the weight of this pecan bar – neither too light nor too heavy; again, nicely balanced. 5/5.
Now I know why one cannot get a sausage roll past 11 a.m.: the sausage in them is extremely flavourful, and the puff pastry is devine! If you like puff pastry for a savoury item, I can't stress this puff pastry enough. I remember I once had puff pastry like that, from an old Polish baker, on a different continent, in 1997. On the sausage rolls here – THAT puff pastry is what one dreams of in Viennoserie! For sausage rolls anywhere, it doesn't get any better than this!! ☺️ ⭐⭐⭐⭐⭐

Read moreI ordered several times. Bakery with plenty of options. The bread is good but after 24h start tasting weird and becoming chewy (even if you leave it in the fridge or in room temperature). The pastries, sandwiches etc are okay, but for my point of view the main inconvenience of this company is the price, is too high. I do not know if these prices make sense in a city like BKK for a product that the local does not consume that much. If the prices are set high, must be an exhaustive study behind these, considering the rent, raw material, machinery, etc. I think this bakery has found its niche, but it is "losing" other type of customers because of the prices. I do not mean need to sell the bread at cost price, but in my home country (that bread is a basic thing in our daily diet) if the prices were same as here, people would not consume bread with the same frequency.
