Came here to celebrate my birthday, and unfortunately had a terrible experience, culminating in the head chef sneering at me that I wasn’t a “real coeliac” (which I never claimed to be - I have an allergy, but I’m not coeliac) and me needing to walk away from the conversation before I burst into tears.
We initially called up to ask if they could accommodate a gluten free dietary requirement - they told us that their ingredients contained traces, however they could adjust the menu for no gluten containing ingredients (with traces being ok, as all food is prepared in the same environment). This was confirmed on our booking confirmation and by the waitress who seated us.
However, when the first course came out, it contained croutons, and unfortunately I didn’t notice until I had eaten one. I pointed this out to the waitstaff, who replaced the meal but did not apologise or acknowledge the error. All other courses were brought out acknowledging where it had been modified to be gluten free.
At the end of the meal, the head chef came out to talk to the diners, and my husband mentioned that the first course had been brought out with croutons when we’d requested gluten free. The chef immediately jumped on the defensive and sneered at us “not to worry, I won’t be trying to make any accommodations for gluten free again” and that we were told that there would be traces of gluten in our meal at the time of booking. When I tried to explain that there is a difference between having traces of gluten from cross-contamination and eating croutons in your first course, he then went on to say that soy sauce containing gluten had been used throughout the menu and his daughter was a “real coeliac” and he would never feed her that menu. At this point, having been sneered at and having the legitimacy of my dietary requirement being called into question (again, I never claimed to be coeliac), I had to walk away from the conversation. Needless to say, this wasn’t how I would expect to be treated when I go out to dinner, let alone when we’re paying hundreds for the experience and on my birthday, as well. I chose Ynyshir to propose to my partner, knowing I needed somewhere special for her that I knew would deliver an amazing experience, and Christ alive did I do just that.
Knowing my plans, the staff made our stay, somehow, even more special. They were warm, friendly, extremely professional and hospitable . Making you feel relaxed from the moment you arrive.
The room was amazing, sleek, modern and cozy. Super comfy bead, beautiful bathroom and elegantly designed.
The food at dinner was, as expected, life changing. Gareth’s food is produce and flavour driven, every single serving was precise, considered and completely focussed. There is quite literally nowhere on the planet you could have a meal like this. A personal highlight for me was being served banana ice cream with birch syrup and caviar, whilst drinking a NEWCASTLE BROWN, as Jungle Is Massive was playing under a disco ball. Magical.
Drinks list was brilliant, ace beers, sake and fizz. The wine list wasn’t to extensive, and rightly so, focussed and well priced. Cocktails were also a highlight, if expletives wouldn’t get my review banned, then it would be peppered with them, particularly to describe the banana and whey old fashioned I had at the end. Of which I had three, around a fire, in Viking jackets. Brilliant.
Breakfast was also top draw, fresh warm bread and butter, warm rye and miso muffins, hot coffee, yoghurt and granola with cherries, cured meat and cheese, smoked trout with cream cheese and Yorkshire gold - boss move on the Yorkshire gold. Brought to your room with the same stunning crockery and cutlery from the restaurant.
Every single detail in considered, a 32 course meal with a different bit of crockery for each. Everything made from wood comes from one local producer and everything metal from one local blacksmith.
Without a doubt this is the best restaurant in the UK and certainly must be up there with the best in Europe if not the world. Deserving of every accolade but in my opinion, this was far superior than any three star Michelin restaurants I’ve been to.

I cant even describe how amazing it was.|The staff - knowledgeable, friendly, attentive and not pretentious.|The semmelier was especially knowledgeable and had fascinating stories about the drinks and glassware and producers.|The chefs - incredible service and food whilst being totally calm and working together like a well oiled machine and not a cross or stressed chef in sight.|Every diner looked totally overjoyed at the whole experience, it was such an amazing place to spend the evening and so lovely to be surrounded by such happy amazed people.|You mostly all faced the direction of the kitchen which was brilliant and being shown the ingredients first and moving from bar to bar to restaurant felt really unique and exciting.|I loved the disco ball and smoke towards the end of the night - everyone applaused and cheered it was such a fun night.|Also loved having a drink outside under the stars sat on a sheepskin by a roaring fire.|The decor of the hotel is gorgeous - it felt moody and dark and beautiful.|Every dish came in its own unique piece of ceramics, wood or stone like you were immersed in the welsh countryside - some of the dishes were even glazed in a glaze made from the ash of the restaurants oven - this attention to detail is evident throughout the whole hotel it truly is incredible. Everything you touch and see has been so thoughtfully considered and executed. I loved how every piece of cutlery felt different and unique and hand made and mostly didnt look like cutlery!|The atmosphere was amazing, the music was fun but not too loud. Anyone who doesnt come away from this restaurant feeling like its the best thing they have ever experienced is dead inside.
