Bam. I don't know which ranks higher in marking a new business success story-- the food or the service-- but this new business earns 5 star in both categories. As frequent travelers to this area, we have a new love. This place was easy to find. Call it luck, call it fate --- we landed TYS and had a hankering for bbq. A quick google search led us to Hatchers. A mile from Knoxville airport, why not?! Finding the location was easy. Walking in: what a surprise they opened YESTERDAY. The greeting we got was a delight in itself. The cashier/order-taker (owner?), was obviously in love with her job and showed us a passion that assured us our decision to come here was the right one, regardless of how the food tasted. We arrived at 8pm - an hour before closing. As we perused the menu, we were told they were out of the brisket and the ribs (not a bad problem for this brand new business to have!!). That left us with the chicken breast on the bbq menu, which we ordered, along with the chicken strips. What sauces do you want? Omg, help me please... and she did! "Better Together" is a marriage of the sweet heat and the vinaigrette - this server's own little invention. Thanks for that! Weloved it! Also, the TN Gold sauce -- worthy of a gold medal. The run-down on the food: the massive bbq chicken breast was a bit dry, but the sauces made it rock. The chicken strips were the bomb (I'll come back just for these perfectly breaded strips!) and both sauces made them even better. Top them off with beers from a nearby locall brewery (red ale) and we were set for a food coma that certainly did set in by the closing bell.

The Bottom Line: go here. Try everything. Support local business. Period. (You won't be disappointed.). We'll be back to try the brisket for sure. Keep up the good work, the genuine love and the good food you passionately serve up! I look forward to being a face you recognize walking...

I was yearning for some barbeque. As I have been in the Alcoa/Maryville area just over a year, I came across Hatcher's On Target BBQ on the internet and decided to give them a try. I was pretty impressed. I grew up having Texas BBQ so I wanted something really yummy. I found it! I had the pulled pork as they had sold out of brisket for the day. It was good; mostly moist with a little dryness throughout. The sauce was really good...a little sweet and tangy. I had Momma T's collard greens which were quite good. I tend to favor mustard greens but enjoyed the flavorful collard greens. The macaroni and cheese melted in my mouth. The okra was just right...hot and crispy. I took my food to go and shared a few bits with Cassie, my dog. She was pleased, as well. I.see this restaurant being very successful. I went through the reviews and see similar comments about the dryness. Perhaps they will find a method to make the meat more moist. The interior was very clean and pleasant. I encourage you to make your way over to Wright Rd. In Alcoa and try this...

*Lengthy but worth the read!

If you’re looking for barbecue that will ruin all other barbecue for you, this is the place. From the moment you walk in, you’re welcomed like family by the owners—a husband-and-wife duo who clearly love what they do. Their warmth and hospitality set the tone for what’s to come: an unforgettable meal.

The service is fast, but not rushed. You barely have time to take in the mouthwatering aroma before your plate arrives, piled high with the most tender, smoky, fall-off-the-bone ribs, perfectly seasoned brisket, and pulled pork so juicy it practically melts in your mouth. Every bite is packed with flavor, balanced with just the right amount of smoke and spice.

And if the food wasn’t enough to keep you coming back, the owners will. They remember you after just one visit, making you feel like more than just a customer—you’re part of the family. This isn’t just a meal; it’s an experience. One that you’ll crave again and again!!!! Oh…Friday is burnt end day but you need to get there early before...

Coming in from Texas, this is some of the best bbq we've had! It's clear that Tracy behind the counter has a real talent for making people feel at home with her genuine nature. She recommended the smoked chicken breast which was tender and so flavorful, I'm glad we didn't miss out on it. The meat was tasty enough to easily stand on its own, however the Better Together sauce was another top-notch Tracy recommendation that really took things to the next level. Literally everything we got was fantastic, and the brisket was my personal favorite. Coming back is something we're definitely looking forward to next time we're in town visiting family. Edit - almost forgot to mention that my boyfriend forgot his water on the counter as we were leaving and Tracy ran out to the parking lot to make sure we didn't leave it behind!

It's very clean with a very friendly lady at the counter. You order and then go sit down where your food is brought out to you. I got really smoky pulled pork that was very good. I'm used to a thick sauce and theirs is kinda watery but it's absolutely fantastic. The sweet sauce complements the pork very well. The mac & cheese is thick, cheesy and decadent. It's definitely high end cheese that is used. The fries were fried dark like I like them. It was a very good pulled pork plate. This place is a little hard to find but worth the hunt. Go on Google maps and pay them a visit. You wont be disappointed.

Went to Hatchers On Target BBQ for lunch. It's a small restaurant tucked away in a corner of Alcoa. I just happened to see it on Google maps looking for something else. It's very clean with a very friendly lady at the counter. You order and then go sit down where your food is brought out to you. I got really smoky pulled pork that was very good. I'm used to a thick sauce and theirs is kinda watery but it's absolutely fantastic. The sweet sauce complements the pork very well. The mac & cheese is thick, cheesy and decadent.
