Bam. I don't know which ranks higher in marking a new business success story-- the food or the service-- but this new business earns 5 star in both categories. As frequent travelers to this area, we have a new love. This place was easy to find. Call it luck, call it fate --- we landed TYS and had a hankering for bbq. A quick google search led us to Hatchers. A mile from Knoxville airport, why not?! Finding the location was easy. Walking in: what a surprise they opened YESTERDAY. The greeting we got was a delight in itself. The cashier/order-taker (owner?), was obviously in love with her job and showed us a passion that assured us our decision to come here was the right one, regardless of how the food tasted. We arrived at 8pm - an hour before closing. As we perused the menu, we were told they were out of the brisket and the ribs (not a bad problem for this brand new business to have!!). That left us with the chicken breast on the bbq menu, which we ordered, along with the chicken strips. What sauces do you want? Omg, help me please... and she did! "Better Together" is a marriage of the sweet heat and the vinaigrette - this server's own little invention. Thanks for that! Weloved it! Also, the TN Gold sauce -- worthy of a gold medal. The run-down on the food: the massive bbq chicken breast was a bit dry, but the sauces made it rock. The chicken strips were the bomb (I'll come back just for these perfectly breaded strips!) and both sauces made them even better. Top them off with beers from a nearby locall brewery (red ale) and we were set for a food coma that certainly did set in by the closing bell.
The Bottom Line: go here. Try everything. Support local business. Period. (You won't be disappointed.). We'll be back to try the brisket for sure. Keep up the good work, the genuine love and the good food you passionately serve up! I look forward to being a face you recognize walking...
Read moreI was yearning for some barbeque. As I have been in the Alcoa/Maryville area just over a year, I came across Hatcher's On Target BBQ on the internet and decided to give them a try. I was pretty impressed. I grew up having Texas BBQ so I wanted something really yummy. I found it! I had the pulled pork as they had sold out of brisket for the day. It was good; mostly moist with a little dryness throughout. The sauce was really good...a little sweet and tangy. I had Momma T's collard greens which were quite good. I tend to favor mustard greens but enjoyed the flavorful collard greens. The macaroni and cheese melted in my mouth. The okra was just right...hot and crispy. I took my food to go and shared a few bits with Cassie, my dog. She was pleased, as well. I.see this restaurant being very successful. I went through the reviews and see similar comments about the dryness. Perhaps they will find a method to make the meat more moist. The interior was very clean and pleasant.
