There’s a special kind of satisfaction that comes from finally finding the beef sandwich you’ve been chasing for years — and for me, that happened at Chaps Pit Beef in Baltimore. I’ve spent most of my life disappointed by roast beef sandwiches: the meat’s rarely rare enough, the flavor’s somehow always off, and the texture never quite lands. Even the thinner slices that come close are still plagued by that same overly processed, oddly seasoned taste that makes me swear off beef on bread altogether.

But then I went to Chaps.

Located next to a strip club — which, for the record, adds to the character in all the right ways — Chaps is not some polished, pretentious operation. It’s just the real deal. You walk in and see this literal pit, charred and seasoned with years of beef cooked to perfection. They’re not serving roast beef here. They’re serving pit beef — and it’s a revelation.

Thinly sliced, beautifully rare, deeply beefy — it somehow stays juicy despite the perfectly thin cut. There’s nothing else on the plate trying to distract you. They hand you a soft potato bun, a mound of pit beef, and the rest is up to you. Personally, I toss on some chopped white onions, press the bun together, and that’s it. No sauces. No frills. Just perfectly cooked meat, kissed by smoke, sitting in a soft, warm roll.

Chaps Pit Beef Wow haven't been here in years new building and my my experience today wasn't good came straight from work because thats what I had a taste for the service at the register was mediocre I ordered a cheeseburger and half rack of ribs they yell your order in the back a young man standing not far from the register unwrapped two slices of cheese and literally threw them on a cutting board across the room where the guy was slicing meat off the grill. I ask the guy at the register who cheese is that. He said its probably yours he said what's wrong I said he threw my cheese pretty much from where the cash register was across to the cutting board he said its okay its clean. Standing there mouth wide open amazed at what I witness. I had already paid for my order if not I would have just left. I waited for my order took maybe 5 minutes or more which was cool . I get in my car open up my cheeseburger and it was really good and then I tried one of my ribs it was so tough literally struggled to get the meat off and then was extremely hard to chew so I thought maybe it was just that one but no it was the next rib as well the meat was tough hard to chew. The meal I was so looking forward to was disappointing at best. It did not live up to what I had tasted in the past and with the prices I definitely expected better. Can't say I'll be coming back anytime...

Incredible sandwich! Stopped here while passing through (VA to NY) and realizing my usual stop (John's roast pork in Philly) would be closed by the time I was nearby. Dropped a friend off and looked for B'more specialties. I like to try regional favorites when I travel, especially sandwiches and BBQ. I kept it simple because I wasn't quite sure what I was getting. Just saw a pic and knew I had to try it out. Thought it would be like a saucy brisket kind of thing. Instead it is a smoky, paper thin, tender and perfectly cooked steak sandwich .. So delicious! Would be amazing with something a little saltier like their corned beef or a sausage, and beef. I just had L&T, jalapenos, cheddar sauce, added Carolina BBQ sauce. They have a variety of buns/rolls but I don't see those soft burger buns working so well with the meat it is almost delicate, need the sub roll for it's texture and holding it all in. Would swap jalapenos for hot peppers (didn't know they had them, I kinda rushed my order). It would be very hard to pick my favorite between this and a roast pork with provolone, broccoli rabe and long hots .. But it's damn close and that is an immense compliment lol. Will definitely rethink speeding through/past B'more next time I'm in the area just to get my hands on this sandwich and...

Not for any particular reason, but I hadn't been to this place in probably ten years or so. I'm glad to know that nothing has changed, and they're still as delicious as ever. I got the regular pit beef and a side of cheese fries. Whilst I wasn't particularly impressed with the fries, the sandwich was otherworldly good. I used to get it with horseradish and onions, neither of which seemed to be available at the condiments bar, so I ventured to try their sauces. I tried the House BBQ, the Gold BBQ and the Tiger sauce. To be honest, I don't know why the Tiger sauce was called that, but it was definitely delicious. It was probably my favourite of the three that I had. I traditionally prefer a Carolina-style BBQ sauce, and if their Gold sauce was an attempt at that, I approve. Their House sauce was also good, but it was my least favourite of the three. Nothing was wrong with it, but my taste buds just preferred the other two. I think I covered everything that needs to be covered. The service was good, with the young men behind the counter being very polite and respectful, as ,ell as adhering properly to social distancing, mask etiquette and keeping the condiments area clean. I highly recommend Chaps.
