After reading so many good comments, we made a point to spend the night in Bastrop on our way back to Houston, just to have the opportunity to try Steadfast the following morning. Wise decision! We picked the brisket, a beef rib (Sundays only) and smoked turkey. All were superb, perfectly seasoned with just the right snap in the brisket. The turkey was really moist too, unlike many other places where it is often an after-thought. The rib was just exceptional, the best I've ever had. Sides, especially the street corn, were delicious, and well served. The tasty red beans had a generous serving of chopped brisket on top. The owners were really personable and friendly and the lady even gave my wife a small tour of the place while her husband was getting the meats ready from the smoker. To sum it up, it was the best BBQ we've had in a long time. Everything was just about perfect. They were out of their habanero/jalapeño/2 cheese house-made sausage, unfortunately, and that's our only regret. Next time! Read moreThis place is FIRE!!! I’ve been in search of great Texas BBQ since I moved here, it’s been a long search but I found it at Steadfast Barbecue! (Before y’all think in lying I did have Franklins in Austin and I was tryna match that initial experiece, and this spot definitely did it. And if you still don’t believe me, try it yourself!)
The brisket was moist, succulent, with a perfectly crisp crust from the bark that was well seasoned. And if you need an extra kick or something to brighten up all the great bbq you’ll be scarfing down, the in-house BBQ sauce had a great kick of acidity, adding balance and another depth of flavor to an already great piece of Brisket.

However ,the show stealer was the double cut smoked pork chop special. Not too heavily smoked and still full of natural juices. Seasoning was perfect. I could go on and on and will definitely go back. German potato salad was good but needed a little more tang for my tastebuds. Sauce was awesome and all the in house made pickles and brined veggies were a great addition. Bun was a little crumbly but who cares in the presence of meat like that!
