I have over 25 years of experience in the hospitality industry. This was one of the most disappointing experiences I have ever had. We have dined at Zachs cabin multiple times in the last 10 years. Both lunch and dinner. Typically the experience has been wonderful. Tonight however was a different experience. I left before ordering. We were the first party to arrive just after 5 pm. The entire restaurant was empty. Inside the temperature was well over 70 degrees. The male host or manager sat us at a table next to the fireplace. I asked if we could be moved to another table away from the fire, preferably next to a window. He hesitated then moved us to another table on the other side of the fireplace. It is a double sided fireplace… as he sat us he said we should be patient because he now was double seating the server. I asked again before taking my seat if he had a table farther from the fire (which he did, the restaurant has maybe 20-30 tables). Again we were the first people to arrive. The only other party was a table of 4 and was in the process of being seated right next to us. He said no again. We sat for maybe another 10 min as another party of 2 arrived. People were arriving slowly in 10/15 min increments. Plenty of time for a host or manager to juggle a few tables around. I went outside to cool off (literally and figuratively). The sommelier asked if I was okay. I told him the host/manager was an idiot and it was too hot where we were seated. The host manager reluctantly came outside and claimed he was fully booked and there was nothing he could do. I don’t doubt he was fully booked, but there were plenty of tables to move around. Many 6 tops that could have been swapped. By this time still only 4-5 tables had been seated. He was more concerned with telling me I couldn’t speak to him in a certain tone or language than solving the issue. I left and took the ride back down before ordering. I HAVE OPENED MULTIPLE RESTAURANTS. RAN YEARS OF VALENTINES DAY DINNERS AND DONE WELL OVER 500-600 COVERS A NIGHT. I have worked at the pinnacle of fine dining. Both Bouchon in Napa Valley and the French Laundry. I was a host, manager, dishwasher, chef. I served as a restaurant consultant. This is not how business with $70+ entrees is supposed to be run. The host/manager is not able to handle this job. He is more concerned about controlling his environment than satisfying guest needs. This was not a guest first experience. Read moreWe had previously dined at Zach’s cabin in March. Food was amazing, service was excellent. We decided to bring our family and friends back and had an 800 reservation. We waited 20 minutes before ordering drinks, another 40 minutes before our drinks arrived and 60 minutes before ordering our apps and entrees. Again we had an 800 reservation. It became very clear the restaurant was understaffed so we were patient. Our fondu platter was delivered to the wrong table which only further delayed our dining experience. When we ordered another round of drinks, wine and beer, that took 30 minutes. After inquiring about the status of our entrees several times we finally received them. The $80 elk loin was ice cold winter green salad was overdressed. When we expressed our concerns overall, with the exception of one sever, the staff responded rudely and offered to comp our meals and offered free desert. No thank you.
