I had smoked chicken wings here about a year and a half ago, and I’ve only recently realized what I experienced wasn’t normal or acceptable. The wings were served with a lot of tiny white hairs left all over the skin, enough that it looked “hairy” at first glance. When I brought it up, the staff told me it was normal for smoked chicken to look that way instead of fried, which I now know is completely false.
For reference: those are pinfeathers, and proper kitchen prep involves singeing or scraping them off before seasoning and smoking. This isn’t an obscure detail, it’s basic poultry preparation. Claiming it’s “normal for smoked chicken” isn’t just lazy; it’s misleading to the customer.
