The worst place I’ve ever eaten at in my life. We ordered two mango margaritas as we were being seated. There was one other table of people in there Besides us and it took them 20 minutes to bring the drinks out to us. And that was after several inquiries about where the drinks are. We looked at the menu and decided to order and both of the things that we wanted were not available. We were given the option of roughly 10 items that we could order So we ordered the fajitas and the nachos with the intention of splitting our food. She brought the fajitas first, and we both looked at them and said we’re not gonna eat this. I swear it was unflavored minute rice and the refried beans that I ordered. Looks like they came from a can of bushes beans. The peppers were not cooked and the chicken was white. There was a less than zero chance that either one of us was gonna eat that so we sent it back immediately. A few minutes later, she brought out the nachos and they were equally as gross looking as the fajitas. We were both so hungry so I took a bite of the sour cream and guacamole on top of the nachos and my friend tried one bite of the meat. The nachos were cold and looked disgusting so we tried to send those back as well, but we were told we couldn’t because we had tasted the food so they wouldn’t take it back and refund us. I understand how hard it is to get a new restaurant up and running, but this one experience is a guarantee that I will never go there again. Hire competent people and be prepared to offer all the items on the menu. As you can clearly see the amount of nachos that we ate clearly did not send a message that we’re trying to get our money back after getting full. Not only would I not recommend this restaurant to people I know, I would blatantly tell them not to...

Just went to the new restaurant Qiubos at the old Yessica's. I didn't try the Nicaraguan food and very glad considering the very high price. I ordered the quesadilla and quesabirria tacos. It was literally the most disgusting garbage I ever ate in my life. I didn't even finish my plate and did not let my daughter finish hers. The restaurant is not affiliated with Edwin and Yessica's in any way. It's a complete new owner. Sometimes if I get a bad meal I give them another chance but this food was so bad there will be no second chance. The steak in the quesadilla tasted like eating plain salt and the quesabirria meat tasted very weird and was cold. Eat at your own risk, YUK! I did leave a tip only because felt sorry for the server...

Qiubo needs some work. For service: we received 1 basket of chips/salsa for 5, had to ask for glasses for our pitcher of water, again asked for silverware when salads arrived..which came when entrees arrived. Waitress arrived when we were almost done to ask "everything good". For food: meats were very overcooked, dry, and cold (previously cooked, and just warmed up to serve). When ordering we were told not spicy which is very correct - VERY bland. We told waitress - meat was overcooked and dry, she said credit account and disappeared. Finally, we searched for staff and they told us no charge. It was fascinating to see that Nicaraguan food is NOT like Mexican food. Lots...

This food is absolutely incredible! Every bite makes me feel like I’m eating straight from someone’s kitchen in Nicaragua — full of warmth, authenticity, and soul. The flavors are so genuine that it instantly transports me home. We are truly lucky to have this type of cuisine emerging in the United States, bringing a taste of Nicaragua’s heart and culture right to our table.
