We all fly by these corner country stores on the highways of this great state, and often times when circumstances allow you can stop and have a pleasant surprise. Las Carolinas is where you stop because fresh warm corn tortillas are calling to you, where tender perfectly spiced pork awaits a chance to be wrapped up with salsa and pico in that warm tortilla, all dripping slightly into your hand. That's no secret that the first bite is often the most amazing, but the sign of a good taco is when you hate to take that last bite, and sit there wondering to yourself if you can eat another one! If you decide to go because you want convenient seating, and designer surroundings, and interpretive menus, then you may be disappointed. This place is not for show. This place is for your taste buds, not your eyes. Go there order a couple of tacos, enjoy! I always recommend carnitas, or pastor as a great starting point, And those did not disappoint. Excellent tacos.
The joint is like a convenience store selling Mexican foods with a small restaurant (no interior seating but two picnic tables out front). Expect takeaway.
Came for the tacos. Las Carolinas has a couple of aspects that stick out to me that you might not find at other taco joints. There are grilled onions and a jalapeño on the side. So only cilantro as a garnish, but of course, they have green and red salsa. Like some joints, radishes and lime are also an option on the side.
Did al pastor and barbacoa. The al pastor is a great version, including some pineapple throughout. Seasoned nicely. The babacoa is wonderfully juicy and flavorful. Awesome. These are single tortilla tacos, but we found these a tad thicker than other joints and made for better eating and less falling apart.

Being from San Diego I ordered their California burrito, which wasn't exactly how I expected, but it was just okay. My husband got carnitas tacos, again just okay. I asked for a bean & cheese burrito for my picky kids-it wasn't on the menu but they said they could do it. They charged me around $6 for that burrito. For those 3 things my total was $27! I was willing to give it a shot anyway thinking the food would have been amazing but it was some of the worst mexican food I've ever tasted.
