Taqueria la Escondida #3 — Restaurant in Corpus Christi

A friend of mine recommended La Escondida and I am so glad he did! I ordered Coke Mexicana and the enchiladas de pollo con poquito queso. I don't like a lot of cheese on my enchiladas and some places really over do it and when I order enchiladas with just a little cheese, they don't listen and I end up with lumps of molten cheese. This place got my order right. But beyond that, I love their recipe for chicken enchiladas. They season the chicken very well before they roll it up in the corn tortillas. Most places just shred boiled chicken and roll them up. La Escondida has THE BEST chicken enchiladas. Go have some. Now I couldn't give them five stars because I didn't care for the rice. It was mushy. It tasted good but I didn't care for the texture. The staff is friendly and prompt. They are open 7-days a week; on weekends they are only open for breakfast.
