My husband has chronic issues with gluten intolerance. I want to note he does NOT have, nor has been diagnosed with celiac disease. When he ingests gluten he has fatigue, joint pain, and many other issues that the rest of his family unfortunately suffers from. While visiting there one day, Sandi told me that most people with gluten intolerance can eat her freshly-milled products with little to no issues. I started small, buying only a few products and having my husband eat them and he said he noticed no problems (normally he can tell in a day, or even a few hours). So the next time I was down there I bought A LOT of products--bread, sticky buns, cookies, and a donut. And I encouraged him to eat a lot of them at once just to see if it kicked up his sensitivity. So he had them for dessert, sandwiches, cookies with his coffee...etc, and I asked him regularly if he noticed any issues with them. And he has not. I am so impressed by this and thrilled we have found products he can consume. Sandi is so knowledgeable and informed and she showed me where they bought their mill and the grain they use. Sandi's Bakery located right inside the market building with end of business day goodies. I opted for a key lime muffin and the strawberry scone. The muffin had great flavor and although a tad dry, it tasted better than the $3.50 over cooked strawberry scone.
