In many ways, the work of a critic is easy. We risk very little yet enjoy the power to pronounce judgment on experiences crafted by others. Perhaps that is why I arrived at Waterman’s Restaurant in Galveston with a raised brow and an appetite sharpened by skepticism. A seaside eatery with postcard sunsets – I assumed – might rely on atmosphere over cuisine, serving mediocrity on a pretty plate. I am pleased to confess that my assumption was utterly wrong. Waterman’s did not merely meet the standards of this jaded palate; it shattered my preconceptions and rocked me to my core, earning every shimmer of its five stars.
A Ceviche That Challenges Preconceptions
I began with the ceviche, a dish that often measures a coastal kitchen’s mettle. Presented simply in a chilled glass, glistening morsels of citrus-cured shrimp nestled amid avocado and cilantro. I took one tentative bite, bracing for the usual limp acidity or overdone spice. Instead, I was met with bracing freshness: tender shrimp kissed by lime and orange, bright and clean as an ocean breeze. Each bite revealed layers – a playful hint of jalapeño heat, the silk of avocado, and a whisper of salt that amplified the sea-born sweetness of the shrimp. It was a revelation of balance and vibrancy, the kind of dish that humbles a critic. This citrus shrimp ceviche dared to be both bold and elegant in its simplicity, and in doing so it challenged my every expectation.
The Unexpected Elegance of a Beer
Waterman’s continued its triumph with something as unassuming as a beer. Forgoing the typical wine pairing, I ordered a pint of the local brew – more out of curiosity than conviction. The golden ale arrived frosty; a gentle citrus aroma mingled with the briny Gulf air. One sip, and I realized this was no ordinary beer. Notes of coriander and honeyed wheat danced on my tongue, an ambrosial complement to the ceviche’s zesty chorus. The brew was crisp and refreshingly nuanced, cutting through richness and cleansing the palate for each new bite. In that moment, a humble pint achieved what many curated wine lists do not: it elevated the meal to new heights of harmony. My initial cynicism melted away with each impeccable flavor; skepticism turned to reverence on my tongue.
A Five-Star Experience Worthy of Praise
It is not lightly that I bestow a five-star rating. Yet here I do so without hesitation, knowing it is fully deserved. Waterman’s Restaurant has achieved something remarkable: it took a doubting critic and transformed him into an admirer. Yesterday myself husband & grandson went to eat there. The waiter had a very accent big guy. I ordered a bake potato stomach was upset. He told me that they don’t have bake potatoes. I look at the menus before we came. I said I saw it on the menu he informed me they only serve bake potatoes on Thursday through Sunday. My husband and grandson had walked to the end of the peer. I ordered my husband a cheese burger. I said meat cheese and mustard only. He didn’t understand. I said it again and he said so no lettuce tomato pickle & onion I said no vegetables. Then he ask if he wanted vegetables as a side. I said no fries. I got kids pasta and butter with a side of asparagus. I asked if the pasta was good he said it’s bland. We were sitting outside in the sun. Moved to a table outside in the shade before food came. Our water glasses were low in our glasses. I ask for more water he look at me confused brought out water filled my glass my husbands. Then ask if my grandson wanted water in empty coke glass. I said no. My grandson had a lot left on his plate I also had a lot left. I asked for 2 large containers to take our food. He brought out 1 large for my grandson. 2 small containers for mine. I said could I also have a large container. He seem frustrated. My husband said check please and also cheesecake to go. He sent another waiter back with large container and cheesecake. He sent another waiter out. The new waiter said did you want this large container I said yes again. I will never use the first waiter again. I even ask my husband to communicate with him after repeating myself. I would just nod my head and thank you & please. I feel maybe he needs to find a job maybe not with food & customer service. My husband is a employee at Lakeside Country Club. The owners of Waterman’s are members where he works. Not sure if they are still members there or still own Waterman’s They are a very nice couple. Our server was on her second day so I understand where the lack of service and attention to detail on her part was missed. She was pleasant but not attentive to detail. We didn’t have silverware or napkins until entrees came, empty drinks and appetizers were still on the table when the entrees came out. We weren’t offered more drinks at any time during our experience, missed opportunity for an upsale and guest experience.
We ordered the shrimp ceviche and fried pickles for apps. Both were disappointing, especially the shrimp ceviche which was $22. Way over priced for a bowl of acidic shrimp and chips. Mash and seasonal vegetables with the redfish were luke warm at best. A refire or replacement wasn’t offered, so I just ate the fish. Again, missed opportunity to give a quality experience. Coconut fried shrimp and potatoes were not impressive and came with a habanero sauce that is very hot, not a good combination with the coconut shrimp.
After probably 15 minutes into our entrees, our server finally came by to check on us and I told her we weren’t enjoying our experience and made her aware of the issues. She said she’d let the kitchen and manager know right away. Well it was at least 20 minutes before the managers came to talk with us.
They’re were somewhat demeaning of us and seemed to blame us for the issues, referring to the shrimp sauce saying, “Well here in Texas we like hot sauce” and when I said the redfish could have been seasoned more, he said they usually have complaints about it.
Very poor experience over all. As we were leaving, the manager made an interesting comment. He said, “We hope you come back and we promise it’ll be better.” My response to him back is, “Why didn’t you take the opportunity to make THIS time better?” If you know that this experience was not a great one, you could have changed that, there were many opportunities.
