Garibaldi Mexican Restaurant — Restaurant in Huntsville

We stopped for a late lunch on a Saturday afternoon. The parking lot was almost full, and we were surprised to see only one table occupied. They appeared to have finished their meal and were just chatting. There were a number of dirty tables. I saw four employees. They were chatting, playing games, and on their phones. A waitress took our drink order and seemed annoyed that we weren't ready to order. There were some eye rolls and long sighs! It was at least a half hour before our food arrived. The food was mediocre. I ordered carnitas, and my food was very salty. Same beans and rice you get everywhere. Salsa was watery and thin. Portions were average. The atmosphere is a barely finished industrial building with a few posters and some other western type decorations. We've been here a few times now and while the food isn't bad, it's not consistent. We aren't fans of smothering everything in cheese sauce but at least this time the sauce wasn't extra salty. When you order beef tips burrito, it's disconcerting to bite into ground beef, the menus all need a good wipe down but the pork in the burrito Verde was good. Our server was pleasant, the woman working with her, not so much - she acknowledged that we were there, told us she'd be back to seat us and never returned. I can only speak on the food I ordered but their chicken fajita quesadillas are borderline addicting, I'm quite picky with my salsa as well but they definitely nail it in that area as it rivals Lolos salsa which is the bar. Sometimes the queso is a bit so-so but there is never any left either so I may just be nitpicking. The prices are great and the food is good quality, especially the meat and vegetables.
