I grew up in Lakeville, MN (where Waffle Bar is located), and would never have expected to find desserts like boba tea or bubble waffle ice cream. I fell in LOVE with these desserts when I lived in Los Angeles, and I was SO EXCITED to hear about a bubble waffle store in Lakeville.
So obviously I had to see if it was any good. And let me tell you, I was SO IMPRESSED with Waffle Bar.
I walked in, and right away I was greeted with hometown-themed decor (very heart-warming!) and an eye-popping menu full of beautiful-captured photos of the choices.
Our cashier, Ryan, was so welcoming, enthusiastic, and gave me great recommendations. I learned the restaurant is family-owned, which made me even more excited to support them.
First, let’s talk about the Thai Tea (with boba, of course). Rich, full flavor with incredibly satisfying tapioca pearls. Not too sweet, and also a great price. This is the best boba I’ve had in the Twin Cities, and it truly stands up to top boba places in Los Angeles and San Francisco.
And of course, the main attraction: THE BUBBLE WAFFLE. I ordered the Cookieapolis (chocolate ice cream with sprinkles and fresh baked chocolate chip cookies), and OH MY GOODNESS. First, I watched as Ryan quickly crafted an Instagram-worthy bubble waffle dessert. Very impressive. I took my first bite, and usually the ice cream isn’t the main attraction, but the chocolate ice cream was honestly some of the best I’ve had in my life. To add, the chocolate chip cookies and the bubble waffle were both so fresh and full of rich flavor. My spoon easily cut through the warm bubble waffle, and each bite brought me straight back to those Los Angeles bubble waffle experiences I was used to.

My girlfriend and I had the pleasure of trying their Berrylious and Bananutella bubble waffles. Each mouthful was a carnival of flavors. Read moreWell like most other reviews you do smell the waffles right away and then you'll notice the line as well. Making each one of these looks like an actual pain to do. One person is constantly turning out waffles as fast as the machines allow. Another will then scoop the ice cream and then finally the last person artfully ends it. So each person is getting a very fresh, over the top dessert that will take time. I enjoyed my berrylicious and was wow'd by some of the other creations.
