Country Taco — Restaurant in North Liberty

We've been camping at Potato Creek for years and a new restaurant popped up in North Liberty, e decided to try it for dinner and we are so glad we did. Homemade chips and salsa were brought for us to start, chips were crispy and salsa was good. The food was extremely flavorful, well presented and portion sizes were plentiful. My wife had the chimichangas and I had the chicken wet burrito. The sauce on both dishes was delicious, wife had a mix of cheese,and chicken chimis which were amazing. My burrito was flavorful, but not too spicy. Our waitress was friendly and never let out drinks go empty. We met the owner and her nephew who were extremely friendly and genuinely interested in our opinion of the food. I hope they do well as we will be back. This was/is a great local restaurant. Hard to find parking and from the locals it sounds like the Town and a local business is the issue. Once inside it has humble but good decor. Dinning area was clean and well kept. Service was very good and helpful and was good at explaining menu options and specials. I forgot to take pictures of the plates but the 3 taco, bean and rice special we got were excellent and a good sized portion! Pretty good Mexican food. I would like to see a little more menu options and a little lower prices, but that could be said for a lot of places now. The food arrived in a timely manner and was fairly hot. That's my only real complaint, I don't know why but my plate was hotter than most of my food.
