Starr BBQ has been here for 17 years. I had the pleasure of speaking to the Owner, Santa Gonzales. She’s a wonderful lady with a beautiful smile and great love for her bbq. This is the best bbq in all of Starr county. Some other places around here cook their brisket in the oven and finish it on the smoker to add some smoke flavor. Not here. You’ll see the beautiful smoke ring on the brisket which is proof of a long smoke. I also judge a bbq brisket by how thin or thick the slices are. The thicker the slice, the more confident the restaurant is that it is tender. If it’s real thin, I think that’s a way of hiding the toughness. You’ll be real satisfied with the tenderness and smoke flavor. They also have delicious chicken and sausage. Not many places in Starr county, or RGV in my opinion, make a good mustard potato salad. Read moreThe bread and butter they bring out as a courtesy is very good. The wait time for a burger was too long! The dining area got overwhelmed with smoke and they didn't bother to open a window or door to vent smoke. Our eyes were burning and I have asthma so the smoke was making difficult to breath.
The burger took forever I thought it was going to be fresh and hot. That was NOT the case, the burger was cold and it didn't taste as if it was made on the BBQ grill. There was no BBQ flavor. It tasted like a frozen patty!!

If you, the person eating the brisket decides to add bbq sauce, that’s your choice. Start BBQ put a sweet BBQ sauce on their brisket, which was not emphasized on the menu. It ruined the lunch. Macaroni & cheese had no flavor, but the green beans and iced tea were very good.
