Kumo Hibachi ＆ Sushi — Restaurant in Sparta

FAIR SUSHI. EXCELLENT HIBACHI! First time here. I don't expect much from a super small town Japanese sushi restaurant. I certainly don't expect perfection. The sushi menu is limited. It seems all of the rolls are very, very similar. Although the sushi rolls were good, it was about average for a small town sushi bar. The roll was fresh, cold, and tightly rolled. The flavor was non-existent. The spicy tuna had little to no flavor, and the sauces seemed a bit light in flavors, too.

The hibachi filet and shrimp were excellent. The filet was tender, hot, and cooked perfectly. The vegetables were cooked just enough without being mushy and seasoned very well. The fried rice was also excellent. It is certainly worth another visit to see if things improve.

The serving staff needs better training to know the menu and be prepared to answer questions about sushi, sauces, and toppings. It may be small town Tennessee, but many have joined the sushi culture and are becoming aware of what good...

We have gave this place sometime before coming in and figured by now they would have the kinks out.

Clear soup had a distinct peppercorn taste, which was not pleasant.

Steak cut up way too small, like treats i give my dog and cat. Shrimp way over cooked. Scallops were good. Upcharge for fried rice!?!? As if the prices weren't high enough already.

Service was slow, our waiter was all over the place instead of working a section, which made asking for things like more drink, more napkins etc a challenge.

Comparing it to its competitors, over priced, seems to be lower quality ingredients, and smaller portions over all.

Staff were friendly.

All in all we will likely spend our money elsewhere for now.

Went for the grand opening today the food and staff were amazing. We ordered a TNT roll to split and a steak hibachi lunch special & Salmon teriyaki box. Each came with soup and salad. The soup had plenty of flavor and a little kick to it. The TNT roll was packed with tuna and yellowtail and tasted very fresh. The hibachi steak was super tender and seasoned very well and the veggies and rice were cooked perfectly. The Salmon teriyaki box came out with a healthy portion of each item. The salmon wasn't overcooked. The fried gyoza was phenomenal super crispy outside and perfectly done inside. I couldn't recommend them more. Sparta definitely needed this breath of fresh air. I will miss Achilles being gone but this is a good...
