Got lucky and made it to Springer right at lunch time. Although there were a lot of cars outside they had plenty of seating and we got a table right away. While trying to decide on what to get I saw that they had samples of their red and green chile available which helped make my decision so much easier. I chose the red chile with beans and onions with a flour tortilla and I’m so glad I did. My family ordered a smothered burrito with green chile which was excellent….the beans and rice that came along with it were also excellent, a tostada which was very good and a bacon cheeseburger which was also very good. The service was very prompt and everyone was very friendly and helpful. So glad we got to try this place and would definitely plan our next meal around this place the next time we’re going...

Delicious stop on our way home to Las Vegas! Way better than a normal fast food stop. We got the smothered burrito with ground beef (Christmas style - red and green sauce) and the double bacon green chili cheese burger. Everything was super tasty and fresh! Well, except the fries which needed more time in the fryer and some salt. Other patrons were real locals. One table of guys were wearing cowboy hats and boots with spurs, looked weather worn, and waved to all the other tables, their friends and neighbors, when they left. Another table held a husband and wife who were enjoying a tasty Sunday lunch. When our food arrived and I took out my phone, the lady leaned into her husband with a confused expression and whispered, "Look, she's taking a picture...

This restaurant is not a Mexican, restaurant. red pózole is not made with chili con carne and green pozole is not made out of a can. Very disappointed. Here is the pozole receipie if you need it. ChicKen breast, green jalapeños, poblano pepper, green tomatoes, Mexican squash, cilantro, parsley, all toasted, cook your chicken with a lot of juices add onions and garlic so they cook with taste. After all ingredients are toasted blend with the chicken juice and added back again to the pot add chicken bouillon to your taste. The red pozole is made with pork sirloin, toast or fry Chile guajillo, onion, garlic and blend all until is fully blend and add to the pot. You will have real Mexican pozole. Nobody goes to Springer, NM, except for a reason, and Elida's is a good reason. This locally owned restaurant has a complete menu of New Mexico fare, as well as burgers and such. The waitress is effiient and very friendly. Opened at 7:00 a.m. unitl 3:00 p.m., it serves a wide variety of menu items, all cooked just right. I picked the red chili with flour toritlla. Actually, the homemade tortillas are sooooo good, that I get the chili as an excuse to eat the tortillas! They were nice enough to let me have another one, hot off the grill, with my chili. The only thing I needed was a couch for a nap!

That was my only let down but the taco salad has a huge fried tortilla so that satisfied my chip craving! Will stop again as I travel i25 often and it was a lighter style Mexican food!
