On a ride from Sacramento to Yosemite (yes, we are from the east coast), we stopped at an arbitrary exit in Stockton, and decided to grab a bite to eat; we saw Fondita Mexican Restaurant, in a non-descript strip mall.
What an amazing stroke of good fortune to decide on Fondita.
New Jersey Mexican restaurants are nothing like Fondita; it was fresh and incredibly high quality, something like you might see on a TV cooking show.
The enchilada trio plate was amazing in how all the flavors stood out on their own. It was not a dish drowned in a sauce and that’s all the flavor you got. Rather, the individual flavors stood out, from the beef (not ground beef, but small dice, and tender and had good beefy flavor) to the cheese, it was an overall outstanding dish.
The refried beans, creamy in texture, had outstanding flavor.
The fajita came in the classic sizzling cast iron plate, and the vegetables were not overcooked, still with an al dente feel…great texture. The chicken was moist and the leftovers the next day held up with high quality.
Then there is the tortilla…..certainly not a tortilla that came out of a 10-pack of supermarket tortillas. If they told me it wasn’t made in-house I’d be shocked. Thin, artisan flavor, they might have been the star of the meal.

Read moreI just got one taco and it was a pretty big size and the meat was seasoned very good, I didn’t like that they didn’t have a green salsa. I asked the lady ahead of time , and she said they had green salsa but wen she brought our food she said they didn’t have green sauce but then brought me a red sauce and said it wasn’t as hot as the other sauce they had. But to be honest, it was pretty spicy to me . Their homemade flour tortillas are super good and they reminded me of my mom’s when she would make them when we were growing up. The service was OK. The waitress kind of seemed like she didn’t want to be at work. Lol But I mean, I get it who wants to be at work? It did have a weird smell upon entering, I couldn’t put my finger on what the smell was, but it low-key grossed me out. The first three times I tried huevos rancheros, The second time I tried huevos con Napolis. and the third time I tried Menudo and every single time every dish is good and or great, and the flower tortillas are better than Nena‘s both homemade corn and flour. The service is good. These ladies here are on their job they take it seriously they treat you good even with a full house they still treat you good,Great Homestyle atmosphere .
