BBQ is one of those things that is very regional, and nothing says North East Tennessee like Bare Bones BBQ. Yet the food also contains the essence of other influences such as Georgia, the Carolinas and St. Louis. Anything you order is phenomenal and I believe that is due to the fact that almost everything is homemade in house and with a true love for the BBQ craft. The pulled pork melts in your mouth and the brisket can compete with the best Texas brisket out there. My daughter had the burger (which I tasted) and I couldn’t believe the flavor. The sides were amazing to say the least, from the baked beans and baked potato salad to the homemade mac ‘n cheese and green beans. There are even more side options available and I’m certain they are just as good, we were just to full to enjoy them. And I cannot forget the BBQ sauces, made in house from the owners recipes. I recommend the Dixie Heat, even though the meat truly doesn’t need any sauces, they are just a bonus for the taste buds.
To be more specific it not just the food, it’s also the employees that represent and embody this region. The staff comprises of family and friends. I’m not saying they only hire family and friends, but that is what you become if you work for them. Owner Shannon Vaughn and wife Misty treat everyone, employee and customer, like family and long standing friends. It’s like they welcome you into their home for a good family meal. They are very proud of what they do, and have plenty of BBQ competition awards displayed in the restaurant to backup the amazing food. Read moreThey only have ribs and brisket on Friday and Saturday. So, all 3 of us ordered the pulled pork platter. One looked like finely chopped pork, 2 looked like chunks of pork. Odd, but ok. The pork had a mediocre flavor, a bit dry. The sauces: nothing unique, and some watered down. We tried all 4 sides: beans, Mac n cheese, potato salad and coleslaw. Sadly, they all tasted like they were from a bulk can. The room temperature Country Time lemonade was ok once the ice was stirred around for awhile.

Plate was clean as well as all the others who came with me. The food was great and environment was great. Friendly people who seemed to love their job. And b4 leaving we thought we were done but succumb to the urge for dessert. Which you know with barbeque means banana pudding.
