Food/Taste/Flavor: 3/5 - unfortunately I feel like their quality has dropped over the years and the soup/sides have become very oily. This used to be our go to place for the last 2 decades but we have frequented it less since it's not always consistent
(1) Hot Braised Stew Tendon became a beef and tendon soup rather than just tendon. The noodles and protein was great but the soup was mostly chili oil taste rather than a beef stew flavor.
(4) Clear Broth Braised Beef Noodle Soup was good but again, didn't taste much of a beef stew. The beef was tender and soft and the noodles were starting to absorb the flavor of the soup but there was something off about the flavor that didn't feel like a "beef" soup.
(66) 2 Meat & 1 Veggie Cold Dish of spicy beef stomach, shredded pork ear, and seaweed. Flavored nicely but all three dishes were really oily and become slighty quesy as we ate through our meal
Ambience: 2/5 - while it is a hole in the wall place, there seems to be a lack of upkeep as it feels like the place is becoming more dingy every time we go. While it seems like they wipe the table after each customer, it felt sticky when we sat down.
Service: 1/5 - he was very dismissive of us and was annoyed that we didn't know what we wanted the moment we sat down. He was sitting behind the counter watching videos on his phone and you have to walk up to the counter to get anything else
Value for price: 4/5 - the price is still reasonable but the quality of the food...

The price they charge has been and still is amazing in today's economy in 2024 and I come here everyday for their beef noodle soup. Other places would easily charge the same beef noodle soup for 18 dollars a bowl.
Like the other reviews said, the restuarant is pretty bare bone and has no decoration, holes to the walls but in my opinion is a plus unironically. Because I'm here to eat good noodles and not here to pay for them to put up fancy decorations.
I recommend ordering beef noodle soup with wide noodles instead of regular thin noodles, wide noodles just taste better for me and feels better to chew on.
I also recommend their Szechwan Style Cold Noodles. Sweet, a bit sour and packs lots of heat.You can't really find this dish anywhere...

A few weeks ago, I discovered that this restaurant had altered my credit card charge by increasing the tip amount by an additional 10%, despite the fact that I had already left a 15% tip.
