I had always wanted to come here based on the superb reviews. Finally managed to book a table for V day dinner. Was advised to move to 8 pm so we could be served better, sounded fair to me. Well, we couldn't be any more disappointed. We ordered starters, mains, side dishes and drinks. The food came out in the wrong order: my pan seared foie gras came out quickly (10 mins) while my wife's bouillabaisse was nowhere to be found. Then came the bread with rillettes and 2 kinds of butter. After that, it was the fries that were supposed to come with my wife's steak. We waited for around 30 mins + for the bouillabaisse to come out only to find out it was french onion soup instead. Ok, mistakes happened, maybe from us or the restaurant. We gladly took the soup and asked for the bouillabaisse. It didn't arrive for another 40 mins. In the meantime, they gave us the scallops (side dish) toward the end of when they delivered the bouillabaisse. During this time, no one came to check on us. We had to ask them to clean the plates (other tables had the same issue). By the time, the bouillabaisse came out, we were too frustrated. Now the restaurant was kind enough to offer us a free meal but that didn't help as our special day had been destroyed. We left cash for the ordered food and got out. I don't think that was the norm for Deglacer but unfortunately for us, it was a disaster. Should I give this play another try? Maybe, but not in the near future.

I have tried to be nice and objective, looking back if my wording may cause misunderstanding, and correct them all. However, they keep being severely impoliteand absurd. The way they respond to customer's contribution was a HUGE disappointment. --------- Spacious bistro in Long Biên with lots of green. Average food, disappointing service. Came at 10:15 (brunch served from 10:00) and the tables are yet to be ready. I understand that it's normal for tables outside to be not set up (due to weather). However, it should be ready before dishes. It's annoying that we have to ask the waitress every time we need any utility (napkins, salt, pepper etc). We have brunch with Burrata Salad, Egg Benedict, Deglacier Omelette. They took 45min to get them all served (it’s not busy at all, and the brunch becomes lunch thanks to them). The dishes are served at 10:32, 10:57 and 11:04 (have no idea why they have to lie about the timing). It was not until I asked the waitress (after the salad) why it took so long to get the dishes ready, she told me that they are understaffed that day. All dishes are fine except for the hollandaise sauce. It is not thick enough for me personally. The waitress appears nice, but a bit negligent. She broke the wine bottle, and kept staying in the bar corner during the meal, making it hard to communicate with her.

Long Bien introduces an impressive addition - a French-style bistro customized to Vietnamese palates. Chef Hiểu Hà masterfully crafts exquisite dishes that retain ingredient flavors. On-site herb cultivation and local sourcing are commendable. Starting with fresh bread, butter, and rillettes, progressing to clams casino, homemade pasta alla puttanesca, Galician pork chop, and ending with shiso sorbet (lychee sorbet for my friend), each dish was exceptional. The diverse bread selection, melt-in-mouth rillettes, harmonious clams casino, and herb garden's freshness were highlights. The pasta, altered for local preferences, had rich, tangy flavors, though some anchovy and olive essence was missing. The Galician pork chop's taste evoked acorns and chestnuts these unique pigs are fed. A shiso sorbet made from on-site grown shiso concluded. At 1.45 million VND for two (around 700 VND per person), it's excellent value for top-notch French-style dining. Déglacer prioritizes local sourcing, only importing what's unavailable locally, and boasts an on-site herb garden. Overall, an exceptional experience transcending Vietnamese norms with global potential. Would I return? Absolutely. Hoping for a seat. 5/5 stars.
