If Cuyuna isn't the best Mountain biking spot in the state, it's one of the best. Even better, it's so well designed that it doesn't suffer the constant closings that many of the twin cities trails are plagued with.
The general rule at Cuyuna is "if the parking lot is dry, it's good to ride". One of my recent trips, it started to sprinkle as I was finishing up. Very few spots even got wet and anything that hit the trail soak right up.
In general there is an easy trail (be cautious because this will be difficult for beginners) and there are a series of medium to hard trails. Most of those are designed so there is very short, somewhat hard climb followed by long flowy rollers. They are very fun.
The park has changing areas, toilets, water, maps, picnic area, bike tool station, swimming beach for cleaning off after.
I always finish my be riding over to the Yawley Area and riding Bobsled. Super fun 10 min ride.

Offers something for everyone from fast and flowy to a tabletop jump line and drops. There is a paved trail too but unsure of its distance. Plenty of eating and drinking options in town. Distributed over four clusters of trails, the Mahnomen and Yawkey clusters also have swimming beaches. Kayaking on the lakes is also very nice, scenic.
