If someone was only going to be in SLC for one day, I'd send recommendation a hike up to Ensign Peak, at least if the weather was good. The trailhead can be reached from downtown in about ten minutes and take one past the capital, and the hike itself is steep but short--15 to 30 minutes, depending upon your fitness level. It offers the best views not only to downtown and the south, but also of North Salt Lake and into Bountiful. It's easy to see why Brigham Young used that spot to make his survey of what would become the grid of SLC's street system.
