The City of Carcar is one of the component cities of the province of Cebu. Aside from being a Heritage City of Cebu, Carcar is also known for a number of delicacies Cebuanos long for each time they leave the island. The name “Carcar” brings to mind images of ampao, bucarillo, chicharon and, of course, lechon. These mouth-watering food items are synonymous to the City of Carcar and one of the best places to find all of them is at the public market of Carcar. The public market of Carcar is located in front of the rotunda. It is divided into different sections, but the most interesting section is where the food is sold. One part of the market sells all fruits, snack items and the delicacies available in the city. There are a good number of vendors selling budbud, bibingka, ampao, and bocarillo, among others at the market. The chicharon of Carcar is also another delicacy you can find in Carcar. This tastefully sinful delicacy is one of the favorite snack items for anyone who passes through the city. In fact, as buses approach the city proper, a number of vendors would board them and sell their wares to passengers. Another section has rows of vendors selling the famous Carcar lechon. The lechon sold at these stalls are cheaper compared to buying them in air-conditioned food shops in the city. You can either have the lechon wrapped or you can opt to eat it at the market with the famous puso of Cebu. While lechon makers use their own special sauces to bring out the distinctive flavor of their products, the basic ingredients are essentially the same. These ingredients include onions, garlic, spring onions and the leaves of an herb that can only be found in Carcar. Traveling to the City of Carcar from Cebu City may take you around one hour, but the trip is worth it especially if you visit the public market to have a taste of the best the city has to offer.

New Carcar City Public Market It has two interconnected buildings... 📍Building A or better known as the South wing has a total area of 4729 sq.m. and houses the wet market. 📍Building B also has the same area and is more widely known as the North wing and it houses the dry section and other retail and corporate tenants like LANDBANK and many more. The fruit stands have 35 units with a dimension of 3m x 2m. The parking slots inside the market are suitable for 100 slots for 4-wheel automobiles and 39 slots for tricycles. While there are 268 slots for parking outside and in front of the market. Special features of the new market: 📌Individual meter per stall; 📌Tiles finished flooring; 📌Well-ventilated; and 📌Counters at the wet market are made of granite slabs which you may not find in any other markets. Nice place to explore the local culture. The lechon (roasted pigs) stalls area is the star of the market for tourists. When we entered the area, we had half a dozen vendors shove crispy lechon skins to our faces for a free taste test. It was overwhelming and we laughed at the surprising experience. We observed that the stall vendors where using hand held buthane fire sprays (i'm not sure what its called) to their lechons to make the skin color more brown or golden. I guess its culinary cosmetics? However I'm not sure this is healthy. We also ate at the 2nd floor food court where they have a wide array of local dishes. I'd say come here early in the morning if you are into local culture or lechon.

They moved to this new building after the old public market was ravaged by the typhoon, about 2 years ago if i remember it correctly. Nice and clean and they have a standard price for their lechon. Different sellers to choose from. We tried the spicy lechon from Rutchell's and the native lechon from Oca Paraz. Both were really delicious! They use the dripping from the lechon as their "sarsa" or sauce. But you can just eat it on it's own. You can dine-in at the second floor where there are several carinderias to choose from. You can buy rice, drinks and other dishes together with your lechon! Great experience driving here while in Cebu!

We are heading to Santander and we have a quick stop for breakfast at the market. We order a kilo of lechon at the corner stall since they are the first to canvass us, (maam sir lechon... k yung sa tyan amin ha) and we want the belly part. The lechon vendor cut faster and weigh our order and gave us after packing with the cellophane without us looking for it, however when we start eating we found out it was at the bony part. ( watchout when buying lechon) The picture taken earlier, so this is not the lechon vendor am talking about.
