I recently attended the online Holiday Polvorones & Galletas baking class by Chef Alex Peña at Baking Evolution, and it was an incredible experience! Chef Alex's expertise and passion for baking truly shine through in every aspect of the class.

From the moment we started, Chef Alex made everyone feel welcome and excited to learn. The class focused on two festive cookie recipes: Polvorones and Galletas. Chef Alex's detailed explanations and hands-on demonstrations made even the most complex techniques easy to understand and replicate.

Highlights:

· Polvorones: We learned to make both the traditional Polvorón de Boda and the colorful Polvorón Tricolor. Chef Alex's tips on achieving the perfect crumbly texture were invaluable.

· Galletas: These buttery cookies were a delight to make and decorate. The variety of toppings and customization options allowed for a lot of creativity.

The online format was seamless, with clear video and audio quality. Chef Alex was very engaging and responsive to questions, making sure everyone could follow along and succeed. I especially appreciated the inclusion of vegan options for each recipe, making the class accessible to everyone.

Chef Alex's background in both traditional Mexican baking and formal French techniques added a unique depth to the class. His stories and insights about the cultural significance of these cookies made the experience even more enriching.

When I came across the Baking evolutions page on Instagram I signed up ASAP! I had been looking for a class to bring me back to my cultural baking roots. Never did I think I would leave so hungry for more knowledge! While I know a thing or two about baking baked goods, This was all new to me. I’ll tell you I had a lil bit of baking anxiety. And as we know, Baked goods have a way of making your heart feel comfort. From the moment we walk in the door, we were welcomed by the smell of fresh baked bread ( anxiety gone!) Man! The knowledge of marrying ingredients is like a bakers dream. Chef Alex started talking about enzymes and feeders and I found myself in a bakers dream, There’s a way that he explains things that makes you feel confident about your baking ability, I understood everything and I wanted to stay forever! This 5 hour class goes by so fast. There we were taking a bite of the first batch and all else was forgotten! I realize the timers going off aren’t meant for the bread resting times, or oven bake times
they’re meant to snap you out of bread hypnosis. I am beyond grateful to Chef Alex for teaching us his talent, I can’t wait to go home and practice. We instantly signed up for the next class. Chef Lily was a great help and also a pleasure to work with. You guys have to sign up! It’s for all levels of bread lovers. You just need to show up and enjoy the steps, no...

It’s hard top write a review when something leave you speechless, and that is exactly what Chef Alex Peña did, left me speechless. The knowledge and skill that he has when it comes the culinary arts is evident and on its full display when you take one of his classes. I’ve had the luxury of taking 2 classes with him and both times he as amazed me with his Mexican Bread making skill. I have taken the concha class, and yes when you take this class, you too can go home and make those lovely, sweet delicious sea shell themed Mexican sweet breads, they will be the best concha’s you’ve ever had. I also took his Mexican bolillo and telera class and just as in the previous class, his knowledge was on full display, he gives you step by step techniques and helps you along the way at any point of you have any questions.

Chef Alex is truly a Maestro Panadero, and it is just an utter joy to be able to attend his classes. Like I stated before, he literally helps you with every step, the weighing, the mixing, even explains why there are certain ratios when it comes to certain ingredients, the man is a knowledge machine!!

I am looking very forward to taking more classes with Chef Alex, everyone reading this should look forward to taking one...

The ingredients and materials are all provided, and you get to take your bread home at the end of the class - it’s very cool. Yvonne assists throughout the class and she is also quite friendly. It’s such a great experience - if you’ve ever wanted to take up baking or want to learn to bake, you’ll be sure to have a good time here! Join the network of bakers, it’s a great group to be a part of!

I am grateful that he would share his expertise and precious traditional recipes with me. He was open and even enthusiastic about using vegan alternatives, which I appreciated. No matter your skill level, you are in great hands with Chef Alex. He is a patient and encouraging teacher. The workspace is clean, and the class is well organized. You will be surprised by what you can create with his guidance. The pan and marranitos came out delicious, I was taken back to my days before becoming vegan. And that wasn’t just my experience, I shared the pan with my family from Mexico, and they had no idea that it was vegan! This is all to say that pan dulce can be made undetectably vegan. And Chef Alex can teach you how!
