I bought aqua farms crawfish at Lamendolas in Gonzales, fresh, not frozen. Perhaps they were previously frozen. I made an ettouffee. The crawfish do not cook firm. They are mushy. In my opinion, the chinese crawfish (which I totally dislike) are better than this brand. I bought 4 packs, 18.00 dollars a piece. I first cooked two bags, and placed the other two in the refrigerator overnight. I then cooked the second two bags because the first batch was less than appetizing. Also the bags had plenty of fat, but it was watery. I am thinking the watery fat watered down the tails making them mushy. Not a happy cook! No more Aqua Farms...
