Wow! Just absolutely wow! I am a steak guy. Always have been. When the pandemic hit back in 2020, I got into cooking steaks at home out of necessity. If I can't go to NYC's finest steak houses, I need to learn how to make the stuff at home. DeBragga, Pat LaFrieda, Snake River Farms, all have good delivery options and I tried them all. F.A. DeRosa smokes every one of those larger fine purveyors. The dry aged porterhouse from F.A. has become a staple in my grill routine. It is hands down the best porterhouse I have ever had. I have had probably 30 of them and have no desire to slow down. Stack it up next to Wolfgangs or the master of them all Peter Luger, F.A. DeRosa could supply those guys AND if you know your way around a grill you can easily surpass their quality in terms of cook and taste. If you live in NYC, love steak and are considering a move to the suburbs strongly consider Westfield just based on proximity to these guys. If you love steak and live within 150 miles of here make the pilgrimage. It is totally worth it. I have traveled with this stuff to friends houses in Virginia, Pennsylvania and Long Island City and they always demand more claiming its the best they have ever had. About 15 minutes after entering their immaculate shop in Westifield, you realize that you aren't there to buy food but to have an experience.
The journey starts when you walk in the door. Start by by breathing deeply taking in the dry aged bouquet. Next, let the butcher guide you through the cuts they offer. DeRosa's cuts are unique (primal cut) so the education is enlightening and the butchers are passionate about the lesson. Once you are prepared, pick your slab right from the fridge and watch the butcher work his magic.
Once home, throw it on the grill and wallow in the scent of an aged steak. At this point you have two decisions, platter it sliced and watch it become a social piece amongst your company. Or plate it and watch others silently contemplate thier lifetime choices of steak. It's that good.

They were also so close to closing but he still brought me into the walk in to show me around and explain how they dry age their meat. I ultimately went with a porterhouse for 2 and it was the perfect size! The gentleman helping me even gave me recommendations on how to cook it. I honestly canāt say enough good things about the service.
Now to the steak, first, I want to say that with the gentlemanās help (I canāt believe I didnāt get him name) I cooked this steak to perfection. I wanted tonightās dinner to be special and it far exceeded that.
