On whim the other day, my dad and I picked up three cheeses from the farm stand to serve at our holiday meal today. Oh, my goodness, how delightful a decision that was! The Thistle, a brie-style, was very delicious, either on it's own, or with a touch of honey. I'm excited to get this again, and see how it changes season to season. The ash-rind Witchgrass was a beautiful surprise! Rich, but bright and tart, it held up to strong flavors, like my homemade onion jam with citrus and peppercorns, perfectly. I can see an infinite number of serving possibilities for this one. The alpine tomme style Marigold went beautifully with dried fruit and toasted almonds, but I'm really looking forward to popping it under the broiler on toast tomorrow!
